Preheat oven to 400°F. In a large bowl, combine cream cheese, pepper jack cheese and garlic. Season with kosher salt and cracked black pepper.
Cut jalapeños in half lengthwise, then use a spoon to remove seeds and veins. Fill each jalapeño half with cheese mixture and then wrap each with half a slice of bacon.
Place each piece on a baking sheet. Bake until bacon is crispy and peppers are tender, about 25 minutes.
Notes
Be sure to wear gloves and don't touch your eyes when handling jalapeños.
