Ingredients

dressing

  • cup extra-virgin olive oil
  • cup apple cider vinegar
  • 2 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • ¼ tsp kosher salt
  • ¼ tsp pepper

salad

  • 8 cup (or more) romaine lettuce, chopped
  • 2 medium Fuji or Honeycrisp apples, diced
  • 1 cup dried cranberries
  • 1 cup pecans, chopped and toasted
  • 8 slices bacon, cooked and crumbled
  • 4 oz feta cheese, crumbled

Instructions

  • Add all dressing ingredients into jar with lid; seal and shake. This can be prepared in advance and stored in refrigerator for 2-3 days.
  • In large bowl, add salad ingredients; toss to combine. Divide between individual serving plates and drizzle with dressing.

Note: : If desired, add leftover grilled pork tenderloin or chicken breasts, to add extra protein.
