Preheat oven to 400°F. Bring a large pot of water to boil.
Scrub potatoes, and slice into very thin slices no thicker than ⅛-inch thick. Drop potatoes into the boiling water 2 minutes. Immediately drain potatoes, and rinse with cold water to stop cooking. Pat potatoes dry with paper towels.
Line 2-3 baking sheets with parchment paper. Arrange potato slices in a single layer without overlapping.
Spray potatoes with olive oil spray, and sprinkle with desired amount of everything bagel seasoning. Flip them over, and repeat.
Bake 30 minutes or until potatoes start to turn golden brown and crispy. Bake in batches if necessary.
Remove from oven, and allow to cool before serving.
