Cheesy Chicken Recipe

Ingredients

  • 2 lbs boneless, skinless chicken breasts, cut in half
  • ½ cup butter, melted or ½ cup canola oil
  • 1 clove garlic, minced
  • 1 cup Italian-style bread crumbs
  • ½ cup shredded sharp cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 1 tsp salt
  • ⅛ tsp pepper

Instructions

  • Preheat oven to 350°F. In a small bowl, place garlic into either melted butter or oil 15-20 minutes to flavor the oil.
  • In a pie plate, mix bread crumbs, cheeses, salt and pepper together.
  • Dip chicken, one piece at a time, first in butter then in crumb mixture, turning to coat.
  • In a large shallow baking dish, place chicken in a single layer with edges turned under to make a neat roll, pieces not touching.
  • Bake about 45 minutes or until fork can be inserted into chicken with ease and chicken is browned and crispy.
