Baked Brownie Oatmeal

Ingredients

  • 2 cups unsweetened coconut milk or milk of choice
  • ½ cup honey or maple syrup
  • cup no-sugar, no-oil added peanut butter
  • 1 tsp vanilla extract
  • 2 cups rolled oats
  • ¼ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • tsp salt
  • cup dark chocolate chips

Instructions

  • Preheat oven to 350℉.
  • Lightly coat an 8×8-inch glass baking dish with oil or butter.
  • In a large bowl, combine wet ingredients then stir in dry ingredients and chocolate chips.
  • Pour mixture into prepared baking dish, and bake 40 minutes.
  • Cool 5-10 minutes before serving.
