Smashed Burgers

Ingredients

  • cup mayonnaise
  • 1 tbsp dill pickle chips finely diced
  • tsps mustard
  • 1 tbsp sugar-free ketchup
  • ¼ tsp vinegar
  • 1 tbsp paprika + ¼ tsp divided
  • 1 tbsp garlic powder + ¼ tsp divided
  • 1 tbsp onion powder + ¼ tsp divided
  • 1 lb lean ground beef
  • ½ tsp salt
  • ¼ tsp pepper
  • 8 carb-counter street taco tortillas
  • 8 american cheese slices
  • 1 cup lettuce shredded
  • ½ cup dill pickle chips sliced
  • ¼ sweet onion finely diced

Instructions

  • In small bowl, combine mayonnaise, pickles, mustard, ketchup, vinegar, ¼ teaspoon paprika, ¼ teaspoon garlic powder, and ¼ teaspoon onion powder. Stir and set aside.
  • In medium bowl, add ground beef, salt, pepper, and remaining paprika, garlic powder, and onion powder. Mix well.
  • Form into 8 even-size balls. Then, press one beef portion onto front of each tortilla until it covers surface.
  • Repeat with remaining beef and tortillas.
  • In large skillet over medium-high heat, place tortillas beef side down on skillet. Cook 3-4 minutes, smashing tortillas flat with spatula.
  • Flip burgers, cover with piece of cheese, and cook 2-3 minutes.
  • Top burgers with sauce, lettuce, pickle slices, and onions.
