Oven Baked Asparagus Fries

Ingredients

  • 1 cup panko bread crumbs
  • ¾ cup grated Parmesan cheese
  • ½ tsp salt 
  • ½ tsp black pepper
  • 1 lb asparagus, trimmed
  • ¼ cup flour
  • 2 large eggs, beaten

Instructions

  • Preheat oven to 425°F. Line a baking sheet with parchment paper.
  • In a large bowl, combine panko, Parmesan cheese, salt and pepper; set aside.
  • Dredge asparagus in flour, dip into beaten eggs, then dredge in panko mixture, pressing to coat.
  • Place asparagus in a single layer onto the prepared baking sheet.
  • Bake 12-15 minutes, or until golden brown and crisp.
  • Serve immediately.
