Preheat oven to 350°F.
Drain and discard juice from peaches, then add peaches to 13x9-inch baking dish.
Drizzle vanilla extract and sprinkle 1/4 cup brown sugar and cinnamon over peaches.
In separate bowl, combine cake mix, butter, and 1/4 cup brown sugar until mixture forms clumpy, dry batter.
Crumble batter mixture over peaches, then sprinkle remaining brown sugar on top.
Bake 45-50 minutes until browned and bubbly.
Let cool 15 minutes. Serve warm with vanilla ice cream, if desired.
