Turkey Meatloaf Recipe

Ingredients

  • 2 lb ground turkey
  • 2 Cups shredded mozzarella cheese
  • 1 Large yellow onion diced
  • 1 Cup seasoned bread crumbs
  • 3/4 Cup skim milk
  • 2 Large eggs
  • 2 Tbsps worcestershire sauce
  • 2 Cloves garlic minced
  • 1 tsp salt
  • 1 tsp pepper
  • 24 oz California style vegetables (we used 2 - 12 oz bags)

ingredients for glaze:

  • 1/4 Cup ketchup
  • 2 Tbsps brown sugar
  • 1 tsp dry mustard

Instructions

  • Preheat oven to 375°F. Grease a muffin tin with cooking spray.
  • In a large bowl, combine turkey, mozzarella, onion, bread crumbs, milk, eggs, Worcestershire, garlic, salt and pepper; mix well with your hands.
  • Bake until golden brown, about 35 minutes. Remove from oven.
  • In a small bowl, combine glaze ingredients. Spoon evenly over mini meatloaves. Return muffin tin to oven for another 10 minutes.
  • Prepare California vegetables according to package directions. Serve vegetables alongside meatloaves.
