Preheat oven to 350°F. Grease 2 baking sheets or line with parchment paper.
In a large bowl, beat applesauce, sugar, brown sugar and vanilla together.
In another bowl beat egg whites with an electric mixer until they are frothy and begin to firm up. Fold egg whites into applesauce mixture.
Combine flour, baking soda, salt and cinnamon then fold into egg mixture. Stir in oats, chocolate chips, pecans, and cranberries.
Drop cookies with a teaspoon onto prepared baking sheets.
Bake until set and lightly browned, about 10 minutes. Remove immediately to cooling racks.
