Ingredients

  • ½ cup unsweetened applesauce
  • ½ cup sugar
  • ½ cup brown sugar
  • 1 ½ tsps vanilla extract
  • 2 large egg whites
  • 1 ¼ cups flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ¾ tsp ground cinnamon
  • 1 ¼ cups quick cooking oats
  • ½ cup semi-sweet chocolate chips
  • ½ cup chopped pecans
  • ⅓ cup dried chopped cranberries

Instructions

  • Preheat oven to 350°F. Grease 2 baking sheets or line with parchment paper.
  • In a large bowl, beat applesauce, sugar, brown sugar and vanilla together.
  • In another bowl beat egg whites with an electric mixer until they are frothy and begin to firm up. Fold egg whites into applesauce mixture.
  • Combine flour, baking soda, salt and cinnamon then fold into egg mixture. Stir in oats, chocolate chips, pecans, and cranberries.
  • Drop cookies with a teaspoon onto prepared baking sheets.
  • Bake until set and lightly browned, about 10 minutes. Remove immediately to cooling racks.
