When I saw tuna was on sale I knew it had to be a cheap dinner in the making! To be honest we haven't had tuna casserole in years at our house (I remember making it a lot when we were first married, but I figured my kids wouldn't go for it – they can learn, though, right?) This is NOT the healthiest of dinners, but it'll be warm and yummy on a cold night.
This is our Eat From the Pantry meal this week. I'll have to pick up an onion (now that I think about it, I may have one in my fridge, woohoo!) To see what other folks are doing with their stocked pantry go HERE. Enjoy!
1 (12 ounce) package egg noodles $.75/1 No Yolks HERE or substitute with Ronzoni Healthy Harvest Pasta BOGO $1.
1/3 cup chopped onion
2 cups shredded Cheddar cheese Kraft Shredded Cheese $3.99, use $1/2 from 1/3SS
1 cup frozen green peas Cascadian Farms Frozen Veggies $2, use $1/1 HERE or $1/1 or $1/2 Peelie
2 (6 ounce) cans tuna, drained Bumblebee Tuna Pouch BOGO $2.89; Use $1/5 HERE*
2 (10.75 ounce) cans condensed cream of mushroom soup Campbells on Sale $1; use $.40/1 HERE or $.40/4 from 1/3SS
1/2 cup milk
1 cup crushed Ritz Crackers Use $2/2 HERE, or substitute with crackers in your pantry! To make the crackers really yummy, melt 1 or 2 tbsp margarine and toss them in that – again, this is not health food, so maybe think small portions???
Preheat oven to 425. Cook noodles. Mix noodles, onion, 1 cup cheese, peas, tuna, soup and milk. Pour into oval cassserole dish, top with crushed Ritz and remaining 1 cup cheese.
Bake for 15 to 20 minutes, or until cheese is bubbly.
