What’s For Dinner? Slow Cooked Italian Beef

This is simply the best recipe ever for a beef roast!  When my hubby made it for me while we were still dating (forever ago!) I just knew there was no way I would like it.  Somehow all those peppers and a huge chunk of meat weren’t all that appealing to me . . . until I took one bite!

It’s also probably one of the easiest recipes ever (which of course makes me very happy!)  Just dump your roast and peppers in the crockpot in the morning, and let your slow cooker do the work for you.  (Which, if your family is anything like my family, is a huge blessing on days when you have three children and two parents all heading off in different directions!)   My hubby mixed this up tonight while I was away, and we scarfed it down before heading out to baseball and gymnastics.  So, if you have a crazy busy family night, this one is perfect to add to your menu plan.  (But, it’s yummy enough to serve also when company is coming, and a great meal idea if you have friends or family visiting and are looking for an easy delicious recipe that will impress everyone!)

Here’s what you’ll need to get started . . .  

Just dump those peppers in . . .

Turn your crockpot on . . . (I’ve been know to forget that a time or two!)


And at the end of the day (once the Au Jus is mixed in), you’ll have the most heavenly Italian Beef you’ve ever tasted!

  1. Did the kids eat it?

    • I was shocked – my oldest two actually did! (This was the first time they’ve even tried it.) We were in such a hurry that we just had the sandwiches with veggies, but if I had more time I probably would have added macaroni & cheese . . . I did just put a slice of cheese on top of the bread for my three year old! 🙂

    Is the final product spicy hot?? Hubby doesn’t like spicy hot foods. It sounds yummy to me.

    • Hi Nancy! It is a little on the spicy side, but I don’t like spicy food at all and love this stuff. My husband suggested that you be careful not to break the peppers when you remove them, and removing some of the pepper juice when you take the peppers out as well before putting the AuJus mix in (that would definitely make it less spicy!) Hope that helps!

    Yumm this is really good and I do not like spicey. I broke the whole jar of peppers on accident so I used the half empty jar of sliced pepers that my husband has been using for sandwichs and it worked well not that spicey but all the flavor.
