What’s For Dinner? Slow Cooked Chicken Tortilla Soup

I love easy recipes . . . any recipe that includes the word “dump” in the directions just make me happy. 🙂  So, here's a super simple recipe for slow cooked tortilla soup, that should take just a few minutes to dump into Mrs. Potts, your friendly helper who does all the work for you while you direct traffic (ahem, children) around your kitchen before dinnertime.


It's also just plain ole' delicious, and my hubby and I just gobbled down every last bit of ours.


Simple Slow Cooked Chicken Tortilla Soup 


  1. 2-3 cups cooked chicken
  2. 1 can Ro-Tel
  3. 15 oz. chicken broth
  4. 1 can cream of chicken condensed soup (or use this substitute)
  5. 1 can corn, drained
  6. 1 can black beans
  7. 1/2 tsp. chili powder
  8. 1/4 tsp. cumin
  9. 1/2 tsp. garlic
  10. 1/4 cup onion, chopped
  11. tortilla chips
  12. sour cream
  13. shredded cheese


  1. Dump first ten ingredients into slow cooker aka Mrs. Potts 🙂
  2. Cook on low, 6-8 hours.
  3. Place tortilla chips in bowls.  Pour soup over tortilla chips, then add cheddar cheese & sour cream, if desired.
  4. Enjoy, and freeze any leftovers for a busy night this winter!

  3. The instructions say, “cooked” chicken. I would think I could start w/ a raw bird, no?

    • I bet you probably could Liz, I’ve just always had my chicken cooked first. If you try it and it works let me know!
