What's for Dinner – Over Stuffed Twice Baked Potatoes

I really thought about re-posting Linguine Mushroom Pasta this week (because it’s one of my favorite recipes and bacon’s on sale!) until I got to wandering around All Recipes last night!  I found this amazingly yummy looking recipe that I won’t get to try out until tomorrow, but it looked way too good not to share.

I’ll add a picture once we make it for a quick dinner Thursday, but I wanted to go ahead and share because it looks so incredibly yummy!  (I cannot tell you how badly I want to make this tonight to serve as an appetizer with tonight’s Pork Kabobs, but really, there’s no way I can handle that many calories in one day!)  Is there any way this one can’t be good?  Here’s what you’ll need . .

4 large baking potatoes
Russet Baking Potatoes 5 lb. bag on sale $2.49

8 slices bacon
Oscar Meyer On Sale $3

1 cup sour cream
$0.50/1 Daisy Sour Cream, 16 oz + (exp 12/31/2010)

1/2 cup milk

4 tablespoons butter

1/2 teaspoon salt

1/2 teaspoon pepper

1 cup shredded Cheddar cheese, divided
Kraft on sale $2, look for $1/2 Blinkie

8 green onions, sliced, divided

Preheat oven to 350 and bake potatoes for 1 hour.  Meanwhile, cook bacon.  When potatoes are done, allow to cook for ten minutes.  Cut potatoes lengthwise and scoop the inside into a large bowl, save the skins (and try not to tear!) 

Mix the cooked potatoes with sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 cup green onions.  Blend with mixer until well blended and creamy.  Spoon into potato skins.  Top with remaining cheese, green onions, and bacon.  Bake another 15 minutes and 350.

We’re having this as the main dish at our house (we’ve got a baseball game Thursday!)  But if you’ve got a little time, serve with . . .
Ummmm. . . a little grilled Steak?  T-Bone’s are on sale $8.99/lb. this week, I’m not sure that’s much of a sale but it sure sounds like a fabulous dinner!  Of if you want to keep it super cheap, you could marinate the stew out of some London Broil (on sale $2.99/lb.) until it’s tender and delicious too!  (You could always visit Sam’s Club to pick up some steak . . .)
