Update – we just had these and they were REALLY yummy – we only used a 2 pound roast and it was plenty for dinner and a sandwich for my hubby at work tomorrow. These would also be a great option for pot roast leftovers, and I'd love to try these sandwiches out with leftover Italian Beef the next time we make it – YUMMMMMMM!
I just got home from Publix with four kids in tow (we borrowed an extra), and a sweet older gentlemen came to the window in my car (I prepared to be chastised for my pitiful mothering skills), and said “Young lady, you have got your hands FULL – God bless you!” My older kids couldn't stop laughing because he called me young – he made my day! And yes, I do have my hands full, but so is my crockpot now because I survived the store!
Our family ate Captain Crunch for dinner last night (yup – that's what happens at our house when we play too long at the pool and my hubby walks in the house starving . . .) so I figured I better redeem myself a little. I really struggled looking at the meat deals this week as to what on earth I could do with a pot roast in the middle of the summertime, so I was thrilled when I found this one in Slow Cooker Magazine. I'm even more excited because it can cook while we're out enjoying the summer, and my husband won't resort to Captain Crunch for dinner (how pitiful!) I have a feeling my hubby will be requesting this one again – I sure hope it tastes as good as it sounds. I'll update the picture tonight and let you know how it goes. Here's what you'll need . . .
For the Roast
1/4 cup low sodium chicken broth
$1/2 Swanson Broth 32 oz
1/4 cup Worcestershire
$0.50/1 Frenchs Worcestershire Sauce
$0.50/1 French's Worcestershire Sauce 5/9/2010 SS Insert (exp 7/11/2010)
1/4 cup dijon mustard
1 tablespoon thyme
2 tablespoons tomato paste
$1/1 Muir Glen Product HERE or HERE
1 boneless beef chuck pot roast (2-3 lbs), trimmed and cut in half
On Sale $2.99/lb. at Publix
Kosher salt and black pepper to taste
For the sandwich
1 cup mayonaise
Hellmann's Mayo BOGO $4.69

Stack with $1/2 Hellmann's Target Store Coupon from 5/23 RP (not found in North Alabama)
1 tablespoon prepared horseradish (we're skipping this one)
8 slices bread
The recipe suggests Texas Toast but we grabbed a Crusty Italian Loaf for $1.29 and I'm going to slice lengthwise and then into quarters)
8 slices Swiss Cheese (Publix brand may be cheapest)

$1/1 Kraft Natural Cheese Slices
Combine onions, carrots, broth, worcestershire, dijon, thyme, and tomato paste in crock pot. Salt and pepper meat, add on top of veggies in crockpot. Cover and cook on high heat 4-5 hours or low heat 6-7 hours.
Move beef to large bowl and pull apart into bite sized pieces. Use 2 tablespoons of gravy left in crockpot to moisten. Strain the rest of the gravy using a strainer, getting rid of onions and carrots. Put gravy back in crockpot to stay warm.
Preheat broiler to high heat with rack 6-8 inches from top of oven. Meanwhile whisk together mayo and horseradish, spread onto sliced hoagie rolls or Texas Toast. Divide pot roast among sandwiches. Top with slice of Swiss cheese, broil until cheese melts, 2 minutes.
Serve open-faced with warm gravy to dip in – YUMMMMM!
