I really struggled to think up something new with the meat sales this week, and then I remembered my favorite homemade lasagna recipe! I've used this recipe so many times that this page in my BH&G New Cookbook is now covered in tomato gunk. (So pull out your BH&G New Cookbook if you have one and you'll save printing the recipe). Ground chuck is on sale for $2.99/lb. (and you only need 3/4 lb.); if you don't have some frozen ground beef in your freezer, at least it's a little bit of sale. Here's the recipe:
Lasagna (Serves 8)
3/4 Ground Beef (On Sale $2.99/lb.)
1 cup chopped onion
2 cloves ground garlic (see funny note at bottom; my hubby & I really messed this one up!)
1 7 1/2 oz. can tomatoes cup up (Hunts 14.5 oz. can BOGO 1.39, PRINT $1/3 after you play game)
1 8 oz. can tomato sauce (PRINT $1/1 Muir Glen Product, usually prcied $.89 – $1.09)
1 6 oz. can tomato paste (PRINT $1/1 Muir Glen Product, usually prcied $.89 – $1.09)
2 t. Italian Seasoning ($1/1 McCormick 12/6 Red Plum)
1 tsp. Oregano ($1/1 McCormick 12/6 Red Plum)
1/2 t. salt
1/2 t. pepper
6 lasagna noodles ($.75/1 Ronzoni Smart Taste, 12/6 SS; $1/2 Ronzoni Smart Taste HERE; $1/2 Mueller's Whole Wheat Pasta 11/15 SS; may be cheapest to just buy Publix Brand)
1 beaten egg (FREE with All the Trimmings coupon if you bought 2 Sargento Cheeses)
2 cups ricotta or cream style cottage cheese (Publix Brand On Sale $1.59 or use Prairie Farms Coupon HERE)
1/2 cup grated Parmesan
1 tablespoon parsley
1 8 oz. package sliced mozzarella (Cracker Barrel Cheese on Sale 2/$5, use $1/2 coupon from 11/15 RP, 11/22 SS or HERE)
For meat sauce, in a large saucepan cook meat, onion and garlic until meat is brown and onion is tender. Drain fat. Stir in undrained tomatoes; tomato sauce; tomato paste; Italian seasoning; oregano; salt & pepper. Bring to boiling; reduce heat. Cover & simmer for 15 minutes; stir occasionally. Meanwhile, cook lasagna noodles according to package directions. Drain.
For filling, combine egg, ricotta or cottage cheese, 1/4 cup of the Parmesan cheese, and the parsley flakes.
Layer half of the cooked noodles in a 12×7 pan. Spread with half of the filling. Top with half of the meat sauce and half of the mozzarella cheese. Repeat layers. Sprinkle the remaining Parmesan cheese on top. Bake in a 375 oven for 30 to 35 minutes or until heated through. Let stand 10 minutes.
To make ahead, prepare as above except after assembling cover with plastic wrap and refrigerate up to 24 hours. Remove plastic wrap and cover with foil. Bake in a 375 degree oven for 35 minutes. Uncover and bake about 20 minutes more or til heated through.

Okay, here's my funny lasagna story. Each year for our Christmas get together with my Dad's family, everyone gets to pick WHATEVER THEY WANT for Christmas breakfast. This means that my son might ask for pizza, I usually get cinnamon rolls, my hubby always asks country ham, and my little girl might want cool whip (Poppa & Grandma go that far to give the grand kids WHATEVER THEY WANT!) Well, one year early in our marriage, my dad decided he wanted lasagna (yes, for breakfast) and that James & I should be in charge of making it. We were out of garlic cloves, so decided we could just use minced garlic. James wasn't sure exactly how much a “clove” was, so he guessed it was the size of a FULL HEAD OF GARLIC! Into the mix went about 8 TABLESPOONS OF MINCED GARLIC. As the lasagna was baking our tiny ranch house began to smell strongly of garlic, and it was so bad that we had to leave the windows open on our drive out to their house or we probably would have died of garlic inhalation (it was 28 degrees outside). Anyways, in case you're not sure, a clove of garlic is one of the little pieces you pull off the garlic, NOT THE WHOLE HEAD!
