I have to confess, I have never cooked a ham and decided this was the week to give it a try! My friend Julie made ham last night for a get-together and it was so yummy, so when I saw it was on sale this week at Publix I decided to try it out. I found this recipe that looks super easy, and it cooks in your crock pot all day, so surely I can do this, right? I'm going to pair it with Broccoli Casserole (one of our favorites) and Pillsbury biscuits, so I'll have one happy hubby this week! This is definitely a pretty huge (& not amazingly healthy) dinner for us, so I guess my other recipes this week will have to be a little more health-conscious! Here are the recipes:
Crock Pot Ham
1 cup packed brown sugar
1 (3 pound) cured, bone-in picnic ham (On sale, $2.69 per pound)
Spread about 3/4 cups of brown sugar on the bottom of the slow cooker crock. Place the ham flat side down into the slow cooker – you might have to trim it a little to make it fit. Use your hands to rub the remaining brown sugar onto the ham. Cover, and cook on Low for 8 hours.

Broccoli Cheese Casserole (you can make this ahead of time and then just stick it in the oven when you're ready to cook, you may have to adjust the cooking time though)
1/2 cup margarine
8 oz. Velveeta, cut into in 1/4″ squares (32 oz. package BOGO $5.39)
Crackers Townhouse Crackers BOGO $3.99 (I usually use Ritz but if you don't have any these are probably the best deal for crackers right now)
Cook Steamers according to package directions. While Steamers are cooking, melt 3/4 stick margarine and Velveeta in saucepan on stove (stirring constantly). Melt 1/4 stick margarine in microwave on “defrost” setting, and then mix with one sleeve crackers (crushed). Drain broccoli well (I even press out the extra water with a paper towel) and mix with cheese sauce. Put in round casserole and top with cracker mixture. Bake at 350 for 30 minutes.
