My sister-in-law gave me this recipe years ago, and it's nice because it makes TONS of food and is really cheap. If you make the whole recipe, you'll have one for dinner and one to store in your freezer for when you're in a hurry, so you'll have two dinners with one planning! Here's the recipe:
1 whole chicken, cooked and deboned (I cook it in the crockpot, see HERE; or use 4 boneless, skinless chicken breasts) Publix whole chicken on sale $.69/lb.
1 lb. box spaghetti noodles, cooked and drained (thanks, guys!) Barilla on sale $.79
2 cans cream of mushroom soup the cheapest is Publix brand this week
1 1/2 – 2 cups chicken broth $1/1 Progresso broth 11/15 RP, $1/1 College Inn Broth 11/15RP
1 small green pepper chopped
salt and pepper
1 lb. grated cheddar cheese Publix chunk cheese on sale 2/$4 if you don't have any in your stockpile!
Mix all above ingredients together, pour in 2 greased 9×13 casseroles. Bake at 400 for 30 minutes.

This is my Eat From the Pantry meal this week. I've got frozen turkey that I'll use in place of the chicken in my freezer (leftover from Christmas dinner), green peppers frozen from our summer garden, and the rest of the items are all in my pantry. Looking for an easy way to store frozen casseroles? I saw a great idea that I'm planning to use over HERE. Line your casserole dish with foil, pour in your meal, completely cover with foil and freeze in pan. Then when your casserole is frozen you just pop it out of the baking dish and into a large plastic bag to store until you need it. This minimizes your freezer space and allows you to keep your baking dish. I love it!
