This is my hubby's favorite chicken casserole ever. I usually use cooked chicken that I've previously frozen from my whole chicken recipe. I buy the meat when it's at the best price, cook it, and freeze it until I'm ready for it. Hopefully you have some frozen or maybe you picked up some chicken breast last week when it was on sale at $1.79/lb. If not the boneless skinless chicken breast fillets are on sale at Publix for $3.99 per lb. this week.
Chicken & Dressing
2 -3 cups cooked chicken
2 cans cream of chicken soup ($.40/2 Campbells 10/4 SS; $.25/4 Campbells 11/8 SS)
2 cups chicken broth ($1/2 Progresso products HERE)
1 8 oz. package prepared stuffing (Stove Top BOGO $1.69)
1 stick margarine melted
Place chicken in casserole dish (9×13). Pour soup over meat and 1 cup of the broth next. Melt the margarine in 2nd cup of broth; add dressing mix into the broth & margarine mixture. Pour over chicken. Bake at 350 for 25-30 minutes on until lightly browned on top.
