I really wanted to post a recipe for Homemade Chicken and Dumplings this week, and my sweet friend Anne even gave me her Grandmother's recipe (now that's gotta be good), but since I've never made Homemade Chicken and Dumplings, I thought I'd better stick with what I know!
Anne, I'm going to try that one out really soon (after you teach me exactly how I'm supposed to roll out the dough!), but for today I'm sticking with this easier Chicken and Noodles recipe, and I'll graduate to those dumplings soon (I hope!)
Here's what you'll need for Chicken and Noodles . . .
2-3 lb. whole chicken

4 cups chicken broth
Use cheap broth stockpiled from last weeks sale 🙂

3 cups packaged noodles
$.75/1 No Yolks from 2/21 SS
1/2 cup sliced celery
1/2 cup chopped onion
1/2 teaspoon thyme, sage, or basil

1/2 teaspoon salt
$.50/1 Diamond Crystal Sea Salt HERE
1/4 teaspoon pepper
3 tablespoons all purpose flour
1/3 cup cold water
Cook chicken in crockpot 8 hours (see directions HERE). Pull meat from bones (I know, it's gross!) and set meat aside. Pour 4 cups chicken broth into large saucepan (you could use the broth from the chicken, but it usually seems like it has an awful lot of fat to me. Instead I use either canned broth or bouillion cubes to make 4 cups.)
Add noodles, carrots, celery, onion, and seasonings to the broth. Bring to boiling, and reduce heat. Cover and simmer for 10 to 15 minutes or until noodles and vegetables are ender. Slowly stir 1/3 cups cold water into 3 tablespoons all-purpose flour. Add to broth. Cook an stir until thickened and bubbly. Cook and stir 1 minute more. Stir in the cooked chicken, and heat through. (I like it a little better if you let it cook a little longer – it thickens up a little more than!) Serves 6.
