So, I think I'm loving the idea of warm soup while it's cold outside, and since winter will be over before we know it, we may be having soup once a week at our house through February! When I saw broccoli, potatoes, AND cheese were on sale this week, I figured there had to be an easy way to make brocoli cheese soup, and thanks to All Recipes I think I've found one that should work! Here's what you'll need:
2 cups chopped onion On Sale $1.50 for 3 lb. bag
2 tablespoons margarine I Can't Believe It's Not Butter BOGO $2.49, use $1/1 HERE or HERE or $.50/1 from 11/15 RP
2 1/2 pounds peeled and cubed potatoes On Sale $1.99 for 5 lb. bag
5 cups boiling water
4 cubes chicken bouillon
3 cups fresh broccoli, cooked and drained On Sale $1.47, could also use cooked Frozen Green Giant On Sale $1, $.50/2 HERE or HERE or $1/3 from 1/3SS
salt and pepper to taste
3 cups shredded Cheddar cheese Kraft On Sale $2, use $1/2 from 1/3 SS
In a large stock pot saute onion in butter. Add potatoes, water and bouillon cubes. Cover, bring to boil and then reduce heat to medium and cook until potatoes are tender, about 15 minutes. Remove tough outer skin of broccoli stems and cook broccoli. Once cooked add to soup. I noticed that several reviewers suggested adding the broccoli to cook with the potatoes for the last 10 minutes of cooking time, so that's what I'm going to try! In a blender or food processor puree half of the soup and return to stock pot. Season with salt and pepper. Add cheese and heat soup through until cheese is melted. Serve warm.
