Okay, I have to confess I'm a little scared about this recipe, but figured I'd give it a try in honor of the New Year! My husband's family always had Black-Eyed Peas and Cabbage on New Year's Day, and I thought I could at least try the black eyed peas, but no cabbage here! (Doesn't that mean we won't get rich this year?) There were tons of great reviews on this soup, so let me know what you all think. Here's the recipe:
Black Eyed Pea and Bacon Soup
1/2 pound bacon, diced ($1/1 Farmland Bacon 12/13 SS; $.75/1 Oscar Mayer Bacon 11/15 SS)
1 onion, chopped
3 quarts water
4 cubes chicken bouillon
2 1/2 cups dry black-eyed peas (Publix brand on sale $.79)
1/2 teaspoon salt
1/2 teaspoon pepper
6 small potatoes, diced
Brown the bacon in a large pot over medium heat. Drain grease, and place onion in the pot. Cook and stir until tender. Pour in the water. Mix in the bouillon cubes until dissolved. Stir in black-eyed peas, and season with salt and pepper. Bring to a boil, reduce heat to low, and simmer 45 minutes.
Place the potatoes in the pot, and continue cooking 15 minutes, or until beans and potatoes are tender. Serve warm. Note- A few of the comments mentioned that they let their soup simmer a little longer to thicken, so if you like a heartier soup it's probably worth planning a little extra time to simmer!
