I know I've posted this recipe a time or two, but it's just the best ever recipe for a beef roast, so every time Publix puts a shoulder roast on sale it's my go-to meal. I wish the roast was priced a little lower ($3.99/lb. this week isn't too bad, but I'd love to pay a wee bit less. I price-checked roasts at Aldi's & Kroger this week though and Publix has the best price on this one right now!) I promise this recipe's worth every single penny though . . . your hubby will think you're a crock-pot-goddess when your family devours this one! 🙂
I got the recipe from my mother-in-law (hence the name “Jennie's Italian Beef”). All you have to do is to make it is dump your roast and peppers in the crockpot in the morning, and let your slow cooker do the work for you. So, if you have a crazy busy family night, this one is a perfect addition to your menu plan this week. (But, it's also yummy enough to serve when company is coming, and a great meal idea if you have friends or family visiting and are looking for an easy delicious recipe that will impress everyone! It would also make a great recipe for Super Bowl Sunday in a few weeks if you freeze an extra roast while it's on sale this week. Can you tell I like this recipe?)
Here's what you'll need to get started . . .
Just dump those peppers in . . .
Turn your crockpot on . . . (I've been know to forget that a time or two!)
And at the end of the day (once the Au Jus is mixed in), you'll have the most heavenly Italian Beef you've ever tasted!
Jennie’s Slow Cooked Italian Beef Sandwich
- 2-3 lb. Beef Shoulder Roast On Sale $3.99 at Publix
- 1 jar Pepperoncini Peppers
- 1 Package AuJus Seasoning Mix Use Publix brand, about $.49 each
- Hoagie Rolls
- Trim fat from roast. Place roast in crock pot, cover with pepperoncini peppers (in liquid).
- Cook 7-8 hours on low. Remove peppers (I usually save the jar in the morning and put the peppers back in it to throw them away in).
- Shred beef and mix in AuJus Seasoning. Cook another 30 minutes on low in crock pot. Serve on hoagie rolls. YUMMMMMM!
