I am loving this fall weather we're having and have been so looking forward to harvest time baking. Last week I made my friend Dana's Pumpkin bread and my kids enjoyed every bite (they ate it for breakfast, took it to school for a snack, and still wanted more for dessert!) If you don't have time to bake some, at least make sure to pick up fresh apples ($2.49 for a 3 lb. bag at Publix this week) and pair them with some melted Kraft caramel's for a yummy quick snack (BOGO at $2.59 through tonight).
I was in Publix this weekend hunting down more canned pumpkin and apparently there is a shortage of canned pumpkin nationally this year because of the weather – arghhhhh! The very helpful stocker at Publix reminded me that I could use my own pumpkins that we carve (imagine that!) to get pumpkin puree, so I found this website that gives detailed instructions on how to make it – wish me luck! http://chefinyou.com/2009/10/pumpkin-puree-recipe/
Dana's Pumpkin Bread
3 1/3 cups flour

2 tsp. baking soda

1 tsp. nutmeg
1 cup vegetable oil

4 eggs
2/3 cup water
1 can pumpkin

Mix dry ingredients and wet ingredients separately. Make well of dry ingredients and add then add in “wet” ingredients. Blend all together. Grease and flour 3 large bread bread pans. Bake at 350 for an hour. Your house will smell so yummy!
