Time for a Treat – Banana Chocolate Chip Muffins

I haven't tried these before but my friend promises they are delicious, so my 2 year old and I are going to mix them up this morning! I thought they would be great to send to school for a snack, and since bananas are cheap this week, there are a few deals to be had. Also be sure to print out the new Nestle coupons HERE, because you can never have too many chocolate chips!

3 ripe bananas (on sale $.39/lb.)
1/3 cup vegetable oil ($.50/1 Mazola 10/4 SS or $.25/1 Wesson 11/15 SS)
1/2 cup sugar ($.50/1 Domino Sugar 11/15 RP or 10/18 RP)
1 1/2 cups whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla
1 egg
1 cup chocolate chips ($.50/1 HERE or 11/1 RP)

Pre-heat oven to 350. Combine bananas, oil, sugar, vanilla & egg in a large bowl; mix well. Mix dry ingredients in a separate bowl. Add flour mixture to banana mixture, mixing just until blended (ignore lumps). Fill muffin tins 2/3 cups full. Bake 20 minutes. This recipe doubles easily.

Update – I made these this morning and they are soooooo good & super easy. I was a little worried because the recipe only calls for whole wheat flour, but I guess you can add chocolate chips to anything to make it delicious! I wish I had doubled the recipe, and I think next time I'll make them in the smaller size muffin cups so that I can pack 2-3 small muffins in snack bags for my kids snacks. YUMMMMMMM!
