With Thanksgiving just around the corner (and all the best meat deals definitely on turkey & ham), I thought I'd come up with one complete meal this week, one “ball game night” meal, and two side dish recipes for Thanksgiving. I saw a great recipe for Sweet Potato Casserole that looks delicious (especially with cheap sweet potatoes this week!), and the homeade dressing recipe is as close as I could find to my mother-in-law's (she does hers without an exact recipe, so I was afraid to “guesstimate” the ingredients). Happy Thanksgiving a little early!
Sweet Potato Casserole
3 cups cooked and mashed sweet potatoes (on sale, $.37/lb.)
3/4 cup white sugar (Domino Premium Sugar, $2.49,$.50/2 from 11-15-09 RP -$.35/1; $.50/2; $.30/1 from 10-18-09 RP & 08-30-09 RP -$.30/1 PRINT)
1/3 cup butter, softened
2 1/3 eggs (Free if you have your Southern Market Coupon or if you have the All The Trimmings coupon for free eggs when you buy Sargento, see details HERE!)
1 teaspoon vanilla extract
1/2 cup milk
1 cup flaked coconut
1/3 cup all-purpose flour
1 cup packed brown sugar (Domino Sugar – $.50/2 from 11-15-09 RP -$.35/1; $.50/2; $.30/1 from 10-18-09 RP & 08-30-09 RP -$.30/1 PRINT)
1 cup chopped nuts
1/3 cup melted butter
Directions
Preheat oven to 350 degrees F (175 degrees C).
Combine the mashed sweet potatoes with the white sugar, soft butter or margarine, beaten eggs, vanilla and milk. Spoon into a 2 quart oven proof baking dish.
Combine the coconut, flour, brown sugar, chopped nuts and melted butter. Sprinkle over the top of the sweet potatoes.
Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes.
Dressing
1 (1 pound) loaf crusty Italian or French bread, cut into 1/2-inch cubes
4 tablespoons butter (Cabot Vermont Natural Creamery Butter, On Sale $1.50, $1/3 from 08-02-09 SS, $3/1 Tearpad, $.50/1 Peelie)
2 onions, diced
2 celery stalks, diced (on sale $.69)
1/4 cup minced fresh parsley leaves
1 teaspoon dried sage, rubbed between fingers
1 teaspoon dried thyme leaves
3/4 teaspoon salt
1/2 teaspoon ground black pepper
2 cups low-sodium chicken broth (Swanson Broth On Sale .59¢, $1/6; $.35/4; $.25/4 from 11-08-09 SS)
2 large eggs (Free if you have your Southern Market Coupon!)
Directions
Spread bread cubes in a single layer on two large sheet pans and let dry for a few hours or overnight. Adjust oven racks to lower- and upper-middle positions. Heat oven to 400 degrees. Bake bread until golden, 12 to 15 minutes. Reduce heat to 350 degrees.
