Southern Living Chunky Apple Cake Recipe

  1. I literally JUST MADE this cake this morning!! I found the recipe on another site a couple of weeks ago and just got around to it. I don’t bake alot, so I was looking for a good option for the annual Friendsgiving at a local church.

    First, let me tell you that this is one of the easiest, most forgiving cakes I have made. Second don’t let the amount of batter-to-apple ratio, throw you. There is so little batter, and it is so thick, but it will bake into a full cake. Third, this cake is plenty sweet, so frosting/icing is not necessary. However, a drizzle of cream cheese frosting will hide any “mistakes” on the cake. 🙂

    I made this recipe almost exactly as directed, except I left out the nuts, due to allergies. I did make the mistake of baking it in a bundt pan, but it still came out great. The bottom half was just not fully cooked. So, I just ended up taking it out of the bundt pan and flipping it upside down on a baking tray to bake it a little more. After baking and cooling, I flipped it back and drizzled with a little cream cheese frosting.
    It tastes a little like apple pie with a delicious flavored batter. Tart apples are really good with this cake, as the cake tends to be quite sweet. This is a winner! Next time I will use the 13 x 9 pan, as instructed.. This recipe made about 15-16 bundt cake slices.
