Slow Cooker Beef Tacos



I'm so stinkin' excited about this! If you've been following along with PPP, you know we're working on our 4 Weeks to a Better Grocery Budget series this month, and this, my friends is how it's done.




It's called.






it's amazing.


Because it's planned. And prepared. And actually on the table when it's supposed to be. 


I just love that. 😉


As I shared yesterday, I'm using my friend Tiffany's menu plan (I LOVE IT!), and this week her recipe for slow cooker beef tacos were so good I couldn't wait to share them with you.


Plus they were ridiculously easy.


So you've got absolutely no excuse at all not to pull out Mrs. Potts and get to work. 🙂




Monday we made Tiffany's recipe for Chicken Florentine Quesadillas (so, so, so good), and tonight we're having her loaded baked potatoes with Homemade Cheese Sauce. She's got three meal plans to choose from (Slow Cooker, Whole Foods, and Traditional Menu Plans), and we're using her Whole Foods plan this week.


All this organization is even impressing myself. 🙂

3 Ingredient Slow Cooker Beef Tacos


  • 1 can enchilada sauce
  • 1 can chopped green chiles
  • 1 2-3 lb beef roast (I used a shoulder roast)
  • taco seasoning (optional ~ my  homemade version is over HERE)
  • taco toppings (lettuce, tomato, cheese, sour cream, green onions)



  1. Place roast in your slow cooker.
  2. Pour enchilada sauce and green chiles on top of roast.
  3. Slow cook 8 hours on low.
  4. Shred beef and serve on tacos ~ easy!

    I have a question about the enchilada sauce. The recipe doesn’t specify, but it looks like you used green chile enchilada sauce (not the “traditional” red enchilada sauce). Is that correct? I have a good track record of using your recommendations for recipes and don’t want to mess this up. Thank you, in advance, for the clarification.
