I had a great question on the PPP Facebook page from reader Sonia, asking for suggestions on what side dishes to make for Thanksgiving. Here was her question:
“Just wondering what I could fix that is easy and not the same ole' boring side dishes for Thanksgiving….any suggestions?”
We usually are at my in-laws home for Thanksgiving, and they have a pretty traditional menu to follow (in fact, we were just discussing over the weekend which items we'd need to “make it” Thanksgiving.) Here are a few side dishes you might try. . .
- Broccoli Cheese Casserole
- Crockpot Mashed Potatoes (perfect for Thanksgiving. . . )
- Corn Casserole

Every year we make the same sides: hash brown casserole, broccoli and rice casserole, sweet potato casserole (see a theme here?), asparagus casserole, lady peas, homemade mac n cheese, dressing (with and without giblets), homemade yeast rolls.
That said, we started serving the Captain Rodney’s dip as an app last year. It went over so well had to make another round of it before all of the other food was ready.
My recipe is a nod to my Southern roots. Even if you don’t like okra or think you don’t like okra, give it a try. It gets mixed in and you don’t have to worry about the slimy part.
Okra, Bacon and Rice
1/2 pound bacon (or more if you like)
1 onion, chopped
1 bag of frozen sliced okra, prepared according to bag directions, then drained
6 cups of cooked rice – instant will work, but real rice is best
salt and pepper to taste
Cut bacon into 1″ cubes and fry in a saucepan until almost crisp. Remove bacon with a slotted spoon to a paper towel to dry. Place onion pieces in bacon grease and saute until soft and golden.
In a large serving bowl, combine rice, okra, onion and bacon grease together and mix well. Add salt and plenty of pepper and mix well and serve hot.
Don’t skimp on the bacon grease as that is what flavors it and holds it together. You can always use a little less rice too.

Hashbrown casserole is always a hit at my house! Mix ahead the night before and pop it in the oven for 45 minutes!
