Publix has their skinless, boneless chicken breasts on sale this week for $1.79, definitely a stock up price! There are so many great recipes to use with chicken breast, but this one looked good to me (especially since you'll use the rest of the swiss cheese for your warm ham & swiss sandwiches).
4 skinless, boneless chicken breast halves (On Sale, $1/79/lb.)
ground black pepper to taste (McCormick Pepper BOGO $2.79, use $.55/1 All the Trimmings Booklet, or $1/1, $.50/1, $1/2 from 11/01 RP)
4 slices Swiss cheese (Land O Lakes Cheese, in the pre-packaged Deli Section, BOGO $3.59-$1/2 from 11/15 SS, $1/2 Blinkie)
1 (10.75 ounce) can condensed cream of chicken soup ($.40/2 Cambell's Cream Soup 10/4 SS)
1/4 cup milk
1 cup dry bread crumbs ($1/2 Progresso products HERE)
3 tablespoons butter, melted (hopefully you bought some last week when it was on sale, you can still use the Cabot coupon HERE)
Preheat oven to 350 degrees F (175 degrees C). Place chicken breasts in a 9×13 inch baking dish. Season with ground black pepper to taste. Top each breast with a slice of cheese. Mix together the soup and milk and pour mixture over chicken. Sprinkle bread crumbs on top and drizzle with melted butter/margarine. Bake covered in the preheated oven for 30 minutes. Uncover and bake for another 20 minutes or until golden brown.
