Salad Recipe Ideas With Publix & Kroger Sales


When I was looking over the Publix ad for recipe ideas, I knew that salads would make for such a great meal deal this week! Because Publix has their Fresh Express Salad bags on sale Buy One Get One Free (and we have that handy $.55/1 Fresh Express coupon in last Sunday’s paper. . .) I figured there was no way we could pass up salad night for dinner. Here are two different options to try out this week:

Lightened Up Taco Salad


  • Salad Blend
  • Ground Beef, cooked (or to pinch those pennies, try Jennie-O Turkey Burgers BOGO at Publix this week ~ just crumble onto salad to serve)
  • Package Taco Seasoning Mix
  • Shredded Cheese
  • Salsa
  • Sour Cream
  • Chopped Tomatoes
  • Tortilla Chips (optional)


  1. If using ground beef, brown beef in skillet and drain off fat.
  2. Stir in taco seasoning and 1/2 cup water.
  3. Bring to a boil, reduce heat and simmer 15 minutes.
  4. Place chips on the bottom of your plate (optional).
  5. Add lettuce, cheese, tomatoes and meat mixture.
  6. Top with salsa and sour cream.
  7. Serve.

  • Premium Tomatoes On Sale $1.49/lb at Publix or Red Tomatoes on the Vine $1.29/lb. at Kroger

Spring Salad


  • Bag Salad
  • Grilled Chicken
  • Green Apple
  • Almonds or Nuts
  • 1/2 cup sliced grapes
  • Feta Cheese
  • Golden Raisins or Craisins
  • Salad Dressing


  1. Grill chicken if not already cooked.
  2. Place salad greens on plate, top with apple, grapes, nuts, craisins or raisins, and feta.
  3. Drizzle with your favorite salad dressing, and serve with fresh homemade bread.

  1. Dinner tomorrow night! Great idea…just something for your readership to think about is hooking up with foodies locally and splitting a cow or pig that has been raised locally. We paid a little under $4 a pound for our cow and we have roast, porterhouse steaks, sirloin steaks, ground beef, chopped steak, etc. Anyways, I just pulled out some hamburger meat for the taco salad from our 1/4 share of a cow we split with some people in our neighborhood. The meat is top notch plus you are supporting local farmers! My uncle raised some pigs the year before and it lasted us over a year. He fed those pigs nothing but the best :).
