We've got one kiddo playing soccer, one playing tennis, and one finishing her last week on the track team (plus Jackson had his last band concert yesterday as a senior ~ whew!)
Needless to say if I don't have a plan ahead of time dinner never gets done, so here's what's on the menu:
UPDATE! Dinner's served ~ super easy ~ and I'm kind of in love with this thing!!
- Monday – Slow Cooker Pork Chops from our Countertop Cook Challenge (we use the freezer meals from the slow cooker menu plans at Eat at Home Cooks) + Slow Cooker Broccoli and Slow Cooker Mashed Potatoes (all in my new Crockpot Swing and Serve ~ I'm a wee bit excited to try it out!)
- Tuesday – Slow Cooker Chicken Nachos using chicken from our Countertop Cooking Challenge freezer meals (have I mentioned lately I love freezer meals? These have changed the way we cook for the better around here!)
- Wednesday -grilled salmon, grilled corn on the cob, spinach salad
- Thursday – Breakfast for dinner ~ homemade egg mcmuffins, fresh fruit, and bacon 🙂
- Friday – Leftover buffet
