Are you all ready for some menu planning? We sure are at our house! I'm going to attempt a little freezer cooking this week, so if you're up for the challenge, join me! My plan is to use some cooked whole chicken and pantry staples for one recipe (whole chicken is on sale $1.19/lb. at Publix in current ad, also on sale for just $.77/lb. at Kroger 8/5-8/7!), and to come up with a second recipe using deals from the new ad at Publix starting this Wednesday.
So, stop back Wednesday to see what I come up with! (I've never tried this before, so if you have any recipe suggestions I'd love to hear them!)
Here's what I'm thinking . . .
Monday- Maybe Chicken Noodle Casserole, Chicken and Rice Casserole, or Chicken Tettrazini
Tuesday – Still thinking . . . (let's hope for some good sales at Publix this week!)
Wednesday – Grilled Chicken Caesar Salad
Thursday – Leftovers
Friday – Restaurant Style Nachos or Buffalo Chicken Dip for Back to School Party

Buffalo Chicken Pizza:
Per person (I’m a single gal, like to keep it simple!)
1 Mama Mary’s individual size pizza crust (comes in a 3-pk for $2.50-3.50)
Olive oil
leftover cooked chicken OR boil 1 boneless skinless breast
about 3 T. melted butter
hot sauce to taste (about 1/4 cup)
1.5 t. vinegar (I use the kind with hot peppers in it)
1 clove garlic, (grated, minced, or chopped, your choice) can use more if you like
optional: tiny sprinkle of cayenne pepper
cracked black pepper, to taste
1 oz blue cheese, crumbled
Preheat oven to 450 degrees. Whisk together melted butter, hot sauce, vinegar, garlic, and blk pepper (plus cayenne if you’re using that)–it should be orange. Brush both sides of crust with olive oil, then brush a thin coat of the sauce mixture on the top side. Shred the chicken and put it in with the rest of the sauce, stirring well to coat. Spread chicken onto pizza crust. Sprinkle with blue cheese crumbles. Bake 10 min.
