This meal is little more expensive than most dinners in our home, but we'll have plenty of leftovers (especially of the potatoes!) and the entire meal should cost less than $10. I'll make it Friday or Saturday since it requires a little more time than most of our meals, but if it keeps us cooking at home over the weekend it will be a HUGE money saver.
The London Broil is super easy to make, and since it's so easy, you can work a little harder on the twice baked potatoes! The potato recipe is from my husband's Aunt Geri, and it is amazing – it tastes like Paula Deen walked right into your kitchen and took over the cooking. If you need an easier side dish, just bake up the potatoes and serve with sour cream, but if you have a few minutes I promise the Gourmet Potatoes are worth the effort. And if you need a side dish to take to a get-together, these are perfect!
Super Easy London Broil
2 lbs london broil steaks On Sale $2.99/lb
28 oz. can diced tomatoes Hunts BOGO $1.39, $1/4 Blinkie
2 tbsp. soy sauce
McCormick Montreal Steak Seasoning (or any other steak rub, I just have lots of these from this summer when they were free!)
Sprinkle meat with garlic salt and grill seasoning. Rub seasonings in and then soy sauce. Cover with tomatoes and then place in roasting pan. Cover tightly with foil and bake in oven at 325 for 2 1/2 hours.
6 medium potatoes Idaho Potatoes 5 lb. bag $1.99
2 cups shredded cheddar
1/2 cup margarine
1 1/2 cup sour cream Daisy Sour Cream $1.50, use $.45/1 Tearpad or $.60 from 12/13 SS
1/3 cup chopped green onion
1 tsp. salt
1/4 tsp. pepper
2 tablespoons margarine
Paprika $.75/1 McCormick Spice, 1/3 RP
Boil potatoes in skin until cooked; cool, peel and shred coarsely (I use my pampered chef chopper and just chop up coarsely). Combine cheese and 1/2 cup margarine in pan on stove top and almost melt – stirring constantly. Remove from heat, blend in sour cream, onion, salt and pepper. Fold in potatoes, turn in greased casserole. Dot with margarine, then sprinkle with paprika and bake at 350 for 30 minutes.
