Great American Cookie Cake at Home

Do you love those fabulous yummy cookies in the mall, but hate paying so much money for them?  Well you don’t have to!  Here’s a simple (really easy!) way to make them at home, and this week at Publix you’ll get all the ingredients for just a few dollars.


I will tell you that I highly recommend using an 11×7 rectangle jelly-roll pan with a lip to bake this in (not what I did!), and placing foil underneath it just in case that dough starts oozing. 🙂  I thought that I had plenty of room on my round pan for this big ole’ cookie, but once that dough started melting, I ended up with an oven full of cookie dough (which means now I have to clean my oven. . . quite possibly my least favorite chore in the whole wide world!!!)  So, while my cake looks round, I’m giving you directions for the rectangle, and you can check out Southern Plate’s rectanglular beauty over HERE.

Ingredients for 11×7 Cookie Cake

  1. 3 rolls Pillsbury cookie dough On Sale $2, use $.50/1 Pillsbury Refrigerated Holiday Cookies, or $1.50/3 Pillsbury Refrigerated Cookie Dough
  2. 3/4 cup light corn syrup $0.40/1 Karo Syrup 12/5/2010 SS or 11/7/10 SS
*Note – you’ll need 1/4 cup corn syrup per a 16.5 oz. roll cookie dough; if you’d like to make a smaller version you definitely can, just watch so that the cookie dough isn’t everywhere!  I’d recommend using 1 roll cookie dough and 1/4 cup corn syrup for a pizza sized pan.


  1. Mix together Pillsbury Cookie dough & corn syrup with blender.
  2. Pour onto greased pan.
  3. Pat down with hand; wet your hand with a little water so that it doesn’t stick!
  4. Bake at 325 for 25-30 minutes.

To make frosting you’ll need . . .

Store bought chocolate or white frosting if you’d like to make your life easy 🙂  use $0.50/2 Betty Crocker Cake Mix AND Frosting or $0.75/2 Betty Crocker Super Moist Cake Mix and Frosting from 1/30 SS Betty Crocker Cake Mix is BOGO at Publix this week, or try this white frosting from scratch . . .

  1. 1 cup white Crisco shortening
  2. 2 tsp. butter flavoring
  3. 4 cups powdered sugar $0.50/1 Imperial Poly Light or Dark Brown, or Powder or $0.50/1 Dixie Crystals, Poly Light or Dark Brown
  4. 3 tablespoons water
  5. 1 tablespoon meringue powder I couldn’t find this at Publix but I think Walmart carries it.  It was okay without it, but it would be a little less greasy if you can find some!

Mix ingredients together.  Add additional water, 1 teaspoon at a time if frosting is too thick.  To frost, use frosting bag with a star tip (I got mine at Michael’s years ago and use it all the time!), and just decorate however you like!  (As you can see, mine is not fancy at all, but my kiddos thought I was the greatest mommy ever when they saw that little cake this morning!)

  1. I make these cookie cakes all the time without using the corn syrup. I make it is a regular cookie sheet and decorate it with frosting. They are the best!

    Just to update (because I’m sure you were waiting on one…hee hee), I made this on V-day and it was INCREDIBLE! Loved it, loved it, loved it! And it really did taste like the real thing. The homemade icing is a must. I didn’t find meringue powder at Walmart either, but I thought it tasted just great without it!

  5. You can find the meringue powder at Michaels or Hobby Lobby if you are unable to find it at walmart. I normally find it in the isle by the party supplies in walmart. Great recipe for the icing with or without the meringue powder. (But i do prefer the meringue powder in it)

  7. I just tried to make the cookie using this recipe to test try before making for my son’s birthday party. I used one roll of Nestle Toll House brand in the same 16.5 oz quantity with 1/4 cup syrup. I used a cookie sheet and since it was only enough dough for 1/3 of the pan, I only used one side. My cookie turned out brown and very hard and chewy. It seemed overcooked. I mixed in the food processor instead of the blender so it would be easy to get out of the processor, but I wouldn’t think that would cause a problem. Is the 25-30 minutes at 325 degrees correct? I don’t know what I did wrong! Any ideas? I was testing the recipe because I want to make a cookie cake for my son’s birthday in a couple of days.
