Our First Home (and How All This Penny Pinching Began… )

****Furniture.****

I wanted to share this, because this is our first little home starting way back in 1997 when I was just 21 and James was 25.

We had a *ton* of student loan debt and were trying to live on one income (I never made more than minimum wage), and I remember being the happiest girl ever sitting on the back stoop the first day we drove up ~ brown paneled walls, brown carpet, brown linoleum and everything.

WE PAINTED EVERYTHING (EVERYTHING) WE COULD POSSIBLY SLAP PAINT ON WHITE. 🙂 Our next house was worse than this one, so for the first 7 years of our marriage we pretty much lived covered in white paint.

 

We lived without any furniture for 3 years, and it really wasn't until our current house that we've spent money on furniture at all. (See the ladder in the Christmas tree pic? That's because someone gave us Christmas decorations but we didn't have anything to put it on! The following year for Christmas when I opened my ski coat we had wallpapered the dining room but still couldn't afford furniture ~ until we got the dining room set James's grandparents had. We just sold that a month ago after waiting 23 years to buy our own!)

I'm on the floor with the dog bc the only couch we had was pretty awful, and I refused to let James put it in the family room because I knew then we'd get content and never fight for a decent couch 🙂 (I was seriously the worst wife. Bless that poor boy. We eventually got the plaid couch for $300 and I remember feeling like the richest girl on earth just staring at my beautiful stuff!)

Here's the thing. We LOVED what God had blessed us with. We cared for it. We didn't spend oodles on anything. (Most of the paint was even from the mismatched paint section, and those paneled walls took exactly 7 coats to cover. YIKES!)

And do you know what? That girl back then was no more or less valuable than the girl who sits on real furniture in a little bit nicer home today.

PLEASE PLEASE PLEASE – take pride in the home you've been given *exactly* the way it is.

Clear off the countertops.

Go to Goodwill and find a new to you piece of decor to fill up a space (you'll be amazed at what you can find if you happen in on the right day!)

Grab some paint in the mismatched bin and fluff up a cabinet with some fresh paint. (Hint: use KILZ PRIMER first – or chalk paint is AWESOME and super cheap at Walmart!)

 

DO NOT FEEL LIKE ANYONE ELSE IS EVEN ONE SINGLE OUNCE BETTER THAN YOU if their kitchen is cuter than yours. James and I were just as awesome back then as we are now, 🙂 no matter what our home looked like (and honestly, those were the sweetest days!)

And the truth? You (and your exactly-perfect-for-you-right-now home) are crazy awesome today too.

I pray this weekend gives you some time to love on your space a wee bit ~ I'm cheering for you!

The paperwork (this is the “junk area” of our kitchen where stuff winds up all week . . . and apparently longer because I found this coupon for free Skittles that I requested back in November and totally sadly forgot to redeem!) 🙁

 

Getting a few items mailed that have been waiting for weeks (I am the worst at mailing things ~ for whatever reason it makes me crazy!)

Cleaning all the electronic screens . . .

And checking the daily things off my list!

 

 

 

I also fluffed up my office a bit (my sweet husband sent me flowers. Not gonna lie ~ it's been a bit of an exhausting weekend at our house so these totally made my day ~ my favorite flower has always been tulips!)

It's day two of the 2019 Ultimate Home Checklist Challenge (I'll be sharing my updates each day throughout this first week), and I am LOVING feeling so accomplished today!

I have one sick kiddo home + had some kind of sad news this morning, and realized I can't control so many things in my life each day, but at least for the most part, I can control my home.

 

And feeling like it is under control just makes life on the tough days a wee bit easier to take. 

 

This morning we cleaned the countertops (I'm leaving our “travel tree” up in the corner . . . I'm never quite ready to let Christmas go and it's all that's left of our Christmas decor!) . . .

Did a little dusting and vacuuming . . .

 

And wiped up the bathroom sinks + finished the rest of my checklist too.

 

(Honestly? My favorite part was reading Ruth 2. I am loving having one chapter of the Bible to check through each day to manage and think I may actually stick with this one because there's just something about a checklist!) 🙂

Reverse Advent Calendar

Air Fryer Turkey Breast

Learn how to make the EASIEST Air Fryer Turkey Breast, just in time for Thanksgiving!

Hey everyone, this is PPP team member Cheryl.  I've been LOVING my air fryer for the past 6 months and I wanted to try a turkey breast for Thanksgiving.  I was SO excited how it turned out, that I had to share!!

 

Did you know you can cook a turkey breast in the air fryer?  I didn't either but started looking it up and found that it's SO easy, not to mention delicious!!

 

 

Here's what you'll need to get started, just a few seasonings:

  • salt
  • pepper
  • sage
  • poultry seasoning
  • olive oil

I greased up my air fryer (I have a 3.5 quart).  I also had to cut the breast into two smaller portions so it would fit (the larger air fryers shouldn't have any problem cooking the whole breast).

 

 

Then rub the breast with oil and seasonings, pop it into the air fryer at 325° F for 30 mins.

 

 

After 30 mins, flip the turkey breast over and cook an additional 15 – 30 mins until the internal temperature 180° F.

 

 

It was such a treat to have this delicious air fryer turkey breast ready in such a short time and my family just LOVED it!!

 

Air Fried Turkey Ingredients

  • Turkey Breast (be sure to buy one that will fit your fryer or you can cut it off the bone to fit like I did)
  • salt
  • pepper
  • sage
  • poultry seasoning
  • olive oil

Seasonings are optional.

Air Fried Turkey Directions

  1. Drizzle your turkey breast with olive oil, rub seasonings all over turkey breast and lay in air fryer basket.
  2. Set your air fryer to 325 degrees (I didn't have to preheat mine at all, just set it and set the dial to the correct time).
  3. Set the timer for 30 mins.
  4. Once the timer goes off, flip the turkey breast and set the timer for another 15-30 mins.
  5. Make sure the internal temperature is 180° F – let sit for 15 mins, slice and serve.

My sweet family can't wait to gobble down this Turkey Appetizer Tray, and I'm betting you'll love it too! This one just might become a new Thanksgiving tradition. 🙂

Turkey Appetizer Tray

Here's what you need:

Turkey Appetizer Tray Ingredients

  • small potato or Asian pear (for the turkey head)
  • 1 each Granny Smith and Red Delicious apples
  • small bunch each red and green seedless grapes
  • snow or snap peas
  • baby carrots
  • dried apricots
  • whole almonds and pecan halves
  • raisins
  • cracker sized cheddar and smoked gouda cheese slices
  • 1 box mixed party crackers

These ingredients are merely suggestions! Tweak it to your family's tastes.

A few suggestions are pretzel sticks, pepperoni slices, rolled up ham or turkey slices, red or green bell pepper slices, sliced or whole olives, cherry tomatoes, broccoli or cauliflower.

Turkey Appetizer Tray Instructions

  1. Start at the bottom with the turkey head, using either a potato or pear (if needed, slice the potato in half lengthwise so it will lay flat). You will build out from him in a fan like fashion. Be sure to use the picture as a reference as you are creating your turkey!
  2. Following the picture, add the raisins, snow peas, carrots and dried apricots.
  3. Next, spread out 3 different type crackers using the picture as a guide.
  4. Fill in between the crackers with the almonds, cheese slices, grapes and thin apple slices.
  5. The last part is what really makes it. Add eyes to the turkey by using a hole punch to make 2 white circles and marking them with black dots. Or, take a piece of the white cheese, cut in a circle and put a raisin on top for the pupils. The nose can be made by cutting a triangular piece out of the dried apricot or cheddar cheese. Give him a cute tongue by slicing off a piece of a red grape and don't forget to add pecan halves for his feet!

I just LOVE this little guy! 🦃🦃

What a great and healthy option to have for your guests to nibble on while they wait for the main event.  Or such a cute idea for a holiday party!

I was a wee bit weepy (WHAT ON EARTH?!) as I threw my “CROCK” sign away this morning ~ I'll make a new one next Crock-tober I think. 😂

I can hardly believe it's Crock-tober Day 19 – goodness, I have loved Crock-tober soooo much for making my life easier, and have so enjoyed cooking every morning with you. (I sure hope you've loved it too!)

 

This Slow Cooker Chicken Cacciatore is one of my favorites because my family loves spaghetti, but I love that the chicken is all cooked in so I feel like they're getting a little protein too. This one is so simple, done in about 3 minutes, and all I have to do tonight is throw together a side salad and cook up some pasta.

 

I just love that. 🙂

Once again, Crocktober saved the day at our house.

 

Today I tried out these Slow Cooker Sloppy Joes using the saute feature in my Instant Pot for the first time,  then slow cooked them all day in the Instant Pot too, and they were absolutely fantastic!

I also made this mason jar oatmeal overnight, and I feel like I've totally won at life today.

Clearly my bunch was pretty happy today.

 

My girls walked in the door from school today to the scent of warm brownies heated up in the crockpot.

 

Not sure life gets much better than that on a just-cool-enough-Crock-t0ber day.

 

We totally all splurged, sat down to crock-pot-cooked-mug brownies, and since my hubby had late meetings tonight, we may have had more dessert than dinner tonight.

 

 

While I definitely can't recommend this type of dinner all the time, my kids think I'm the coolest, we're all kind of in a warm-sugar-chocolate-coma, and God gave us a little extra grace with no activities planned for the night.

 

life is pretty good. 😉

Slow Cooker Chicken & Dressing: Crocktober Day 16

 

Oh my word. I am sooooo pleased with Crock-tober again today!

 

Today was slow cooker chicken and dressing, and since this is one of those recipes I hardly ever make (the last time I made it was during Crock-tober 2016 . . .), my hubby was absolutely thrilled to have dinner tonight.

 

(Dressing is his favorite, so this one is always a big win at our house.) 

But today I finally got RIDICULOUSLY SMART.

 

Like, crazy smart.

 

Because we usually have quite a few leftovers, it dawned on me how clever it would be to repurpose those leftovers into freezer meals for busy week nights.

 

Or for a night if I”m traveling and my bunch still needs to eat. 

 

Or even if my hubby just wants something to take to work in a month besides a cold PB&J.

 

I packaged up a few leftovers rather than them throwing them away, and now I have a few more meals done.

 

WOOHOOO!

(I really didn't know I was the smartest momma on the planet, but clearly I am. And you can totally join me now and be the smartest momma too.) 🙂

It's Crocktober Day 14 & 15 all wrapped into one . . . because well it's been a Crock-tober Crazy week! 🙂

I completely forgot to take a picture of the Cheeseburger Soup when we had it last night, but here it was in Mrs. Potts Cooking up all day.

Tonight we're having these slow cooker philly cheesesteak sandwiches and they're my all time favorite ~ I can't even wait until we have dinner tonight!

 

I would love to tell you oodles more, but a friend of mine just texted me a deal on a RIDICULOUS piece of furniture my hubby and I found a few weeks ago but was way over our budget.

So, I'm on my way out to find it now and will update you when I get back. 🙂

EASY Air Fryer Donuts from Biscuit Dough! (4 Kinds)

Looking for an EASY air fryer donut recipe? Here's a GREAT recipe that's delicious and easy to prepare in your air fryer!!

EASY Air Fryer Donuts from Biscuit Dough

Air fryer donuts!  Sounds crazy right??  BUT, I have to tell you, they are AMAZING and EASY and FAST and YUMMY!!!

When Laurie asked if anyone wanted to try out an air fryer, I'd already been looking into them but wasn't sure I wanted another appliance in the house. Let me tell you how HAPPY I am that I bought one!  It's SO convenient, super easy to use and FAST!  Everything tastes great and cooks in minimal time. (Check out a killer deal on an air fryer at Kohl's right now!)

 

 

Let's get back to the donuts!!  I'd heard of donuts in the air fryer and just HAD to try them.  The first time I made them for my daughter and her friend the girls RAVED about them.  Her friend even went home and told her mom she didn't want donuts any other way!

 

 

SOooooo simple!!  I used one small can of Grands Biscuits (you could use any cheap biscuits you have on hand).  Put a hole in the middle – I had this small heart shaped cookie cutter but you can literally use ANYTHING (the donut holes might be my very favorite part).

 

 

Once you have the hole in the middle – you pop them into the air fryer (I was able to fit 4).  I set my air fryer to 350 degrees and set the timer for 6 minuets – no pre-heating necessary!!

 

 

Half way through flip your donuts, so they brown up on both sides.  Once they come out, you put on whatever toppings you'd like, I tried 4 different toppings:

  • Glazed w/Sprinkles
  • Chocolate Glazed
  • Powdered Sugared
  • Cinnamon Sugared

 

 

Seriously, look at these donuts SO easy and best of all they taste AMAZING!!!  Such a great alternative to store bought donuts (and so affordable).

 

EASY Air Fryer Donuts from Biscuit Dough

Ingredients

  • 1 can of biscuits (any kind of canned biscuit – I used Grands as that's what I had on hand)

Optional for toppings:

  • butter
  • sugar
  • cinnamon
  • cream or milk
  • vanilla
  • cocoa powder

Directions for Donuts:

  1. Set your air fryer to 350 degrees (I didn't have to preheat mine at all, just set it and set the dial to the correct time).
  2. Set the timer to 6 mins.
  3. Half way through turn the donuts over.
  4. Pop them out of the air fryer and top as desired!

  3. Half way through give your basket a good shake.

TOPPINGS

Cinnamon and Sugar Topping (my favorite!!)

  • melt a small amount of butter in a dish
  • put 1/2 cup sugar with 2 tablespoons ground cinnamon and mix well into a bowl or dish
  • brush the donut with a little bit of the butter when it comes out of the air fryer
  • roll it into the cinnamon and sugar mixture

Powdered Sugar Topping

  • Shake or sprinkle powdered sugar right on the donut when it comes out of the air fryer.

Glazed Topping (sprinkles optional)

  • mix 1/2 cups of powdered sugar, 2/3 tablespoons of milk and 1/2 tsp of vanilla in a bowl
  • dip one side of the donut into the glaze and let sit on a plate until cooled
  • top with sprinkles if desired

Chocolate Glazed Topping (sprinkles optional)

  • mix 1/2 cups of powdered sugar, 2/3 tablespoons of milk, 1 Tbsp of cocoa and 1/2 tsp of vanilla in a bowl
  • dip one side of the donut into the glaze and let sit on a plate until cooled
  • top with sprinkles if desired

I'm so stinkin' excited to have 6 more meals done today (and I sure hope you're keeping up too!)

 

I've spent this afternoon getting ready for graduation weekend + have my youngest's gymnastics banquet tonight, so goodness, I'm so glad to at least know dinner is done.

Hey everybody, this is Cheryl, PPP team member and here's my take on Martha & Marley Spoon!  When Laurie asked me to take these two meals home from our Nashville retreat, I was apprehensive at best (I'm not well known for having a dinner plan … but I'm working on it)!!

 

I'd not heard of the Martha & Marley Spoon delivery meals, but I will say, I was VERY impressed … like … wow … yummy … I can't wait to dive in, impressed with these meals!

 

 

They come packaged exactly as you'd expect – insulated (to stay cold for 30 hours!!) ~ and include the ingredients you'll need to cook and finish the meal (beyond some basic pantry staples).  LOOK at those FRESH ingredients, SOoooo good!

 

 

 

The instructions were easy for me to follow and I finished the meal in 40 mins start to finish … BONUS!  The first meal I cooked was Seared Steak and Onion Rings with Celery & Goat Cheese Salad (oh … the onion rings…).

 

 

 

I LOVED that this recipe was a little unique!!  This was the celery and goat cheese salad ~ my husband and daughter (YES …. AND DAUGTHER … she's 12) enjoyed it!!

 

 

 

 

The onion rings … oh my … the onion rings!!!  We'll never make them any other other way and SOoooo easy!!  Who knew??

 

 

My husband was straight up in heaven ~ there really IS something to making dinner every night!!!

 

 

We really felt like we had such a fancy meal and I still can't get over how easy it was!  There was more than enough food for all three of us (I think I skimped on the onion rings and salad on this plate because there was PLENTY!!).

 

The second meal was chicken, Fennel Coriander Chicken with Blood Orange Spinach Salad to be exact!

 

This salad was SO yummy (and beautiful!!)!!  The flavors all came together and really woke up our taste buds!  I can honestly say I've NEVER .. as in EVER … ever? cooked with fennel.  It was delicious!!  Even my 12 year old tried it and said it was okay (this is a raving review as the child will not eat a salad :)!!

 

 

The chicken was seasoned to perfection and the whole meal really was delicious (I'm getting hungry just typing this up!).

 

Here's my honest take on Martha & Marley Spoon:

  • I LOVED that everything was EASY and I didn't have to do anything beyond cook the meal.
  • I LOVED the unique ingredients and trying new things.
  • ONION RINGS … did I mention we fell in love with the onion rings???
  • The price was less than going out to eat (and such a treat for dining IN) and with $30 off your first box, it really think it's worth trying.
  • I think it would be PERFECT for a “date” night with your love!  (I mean we have to eat, why not cook together and make a night of it?)

$29 Sideboard Makeover

Note from Laurie: My friend Cheryl is in the process of making over her living room, and goodness, I LOVE what she's done! She was sweet enough to share with us here on PPP ~ take a peek . . .

Just . . . wow!

 

I'm in the middle of a living room makeover (we finally updated our couches after 10 years) and after a tense afternoon of tax preparation . . . this was clearly NOT the time to buy more furniture. 🙂 

 

Our search for sideboards has been going on for M O N T H S ~ all around the $500 range.  This had me thinking . . . why not just paint the one we have now?

 

 

$29 can of chalk paint & wipe-on poly (optional – this was in the garage from previous projects)

 

If you haven't use chalk paint before, it is amazing. 

 

No prep.

 

No sanding.

 

Just, paint!

 

 

I went to Lowes and bought a $29.00 can of chalk paint, painted this beautiful sideboard to match my new furniture and in just a few hours it was done.

I'm thrilled with how it turned out!!  I can't wait to show you the rest … ALL on a penny pinched budget (I'm learning a few things here at PPP! 🙂

Homemade Peach Ice Cream

Note from Laurie: My friend Cheryl made this homemade peach ice cream, and it looks divine (and good for you too ~ yum!)

Hand picked peaches in the south (or anywhere) are soooooo good!  There is an orchard close to our home so we decided to go and pick some peaches for the first time ever.

I was searching for a healthier recipe for peaches when this one for Peach Ice Cream popped up and I knew we had to try it.

 

I'm SO … so … so glad we did!

Here's what you'll need to get started.

Gather up your ingredients and peel and slice your peaches.  The riper the peaches, the easier they are to peel.

Once you have your peaches peeled and sliced, pop them into a food processor or blender until they are finely chopped.  My little one loves peaches almost as much as cupcakes and couldn't wait to help.

Mix the remaining ingredients into a large bowl.

Pour all that into your ice cream maker (this was a splurge Christmas present from last year and we have really enjoyed using it!)

Once it's done you can eat it right out of the ice cream maker and store any remaining in the freezer for up to two weeks.  Enjoy!!

PRINT RECIPE

Homemade Peach Ice Cream

Ingredients

3 cups ripe peaches, sliced and peeled

1 cup fat free half and half

1/2 cup sugar

1/2 cup whole milk

1/2 teaspoon vanilla extract

Directions

  1. Blend the peaches in a food processor or blender until finely chopped. Put the peaches, half and half, sugar, milk and vanilla in a large bowl and mix well.
  2. Put the entire mixture into an ice cream maker and freeze according to manufacturer’s instructions. Freeze any leftovers and enjoy!
