Have you made your menu plan yet for the week? My family has requested that I hide Mrs. Potts for at least a week or two after last month’s Slow Cooking Series, so I’m hoping to make a few of their old tried and true favorites. Here’s what’s on the menu plan:
- Monday – Chicken Enchilada Bake
- Tuesday - Stuffed Pasta Shells
- Wednesday - Red Robin’s Barbecue Chicken Wraps
- Thursday – Leftover Buffet
- Friday – DiGiorno Pizzas ~ I’m heading out on a scrapbooking retreat and figure all those cheap DiGiornos from a few weeks ago will come in handy!

We hid ours forever after two uses
Yum and we are having enchiladas tonight as well
Here is our menu for the week. We have baseball in a different state four hours away over the weekend, and will be doing some hotel room cooking, which I have become quite a pro at doing over the last year. It saves so much money, and incorporates our regular grocery budget. It keeps us from spending way too much at the ball park.
Monday: Cheeseburger and French Fry Casserole
. Lunches will consist of “cooler sandwiches” which are Italian salami, pepperoni, chorizo, and provolone cheese with lettuce, tomato, and salad oil on a hoagie roll, and pasta salad. This is our ball park staple because I can take everything in our cooler to the field, and they are items that do not spoil easily.
Tuesday: Spinach Lasagna Rolls
Wednesday: Spaghetti Squash Veggie Bake
Thursday: Crock Pot Cheese Tortelini
Friday: Leaving for Baseball. I am making a Lasagna, red velvet cream cheese bars, and smores cookie bars to take with us.
Saturday/Sunday: PPP’s Chicken Tortilla Soup made in our crockpot in our hotel room while we are playing baseball

Friday – Tilapia with Brown Butter and Capers Sauce and vegetables
Saturday – Chicken Pot Pie
Sunday – Roasted Pork (not sure what style or flavor yet )
