Menu Plan Monday: Week Of 8/26/12

After our first week back at school last week, I realized I’m going to need to make some serious plans for Mrs. Potts if I ever intend to have a meal besides cereal or pb&j’s at home!  Like many of you, our evenings are filled with baseball, basketball, soccer and gymnastics (yikes!), so if there’s any way that dinner’s going to happen around here, the cooking needs to get done during the day.

 

So…. here’s what I’m thinking this week:

    I’m always curious about what you eat on weekends…

      Hi Jenny! I don’t really “cook” as much on the weekends – usually we have waffles on Saturday mornings if we’re home, and usually have sandwiches for lunch, then grill out on for dinner. On Sunday we always eat lunch out after church (not sure that’s the greatest way to save money at all, but it’s such a nice treat!) and we’re usually so full from lunch that we just do cereal or leftovers from the week on Sunday nights!

      I need to come up with a better weekend plan, but that’s what we do right now, and I also try to bake something special over the weekend… that’s really my favorite thing to cook!

        Thanks Laurie! I love your website and several of your recipes have made it to the regular rotation at our home (slow cooker italian beef sandwiches are my husband’s favorite!)

          You’re so welcome Jenny ~ I’m so glad you like the recipes! The Italian Beef are definitely our family’s favorite too… I need to add those to the menu plan soon!

    M: spaghetti and meatballs with salad and garlic bread
    T: (dinner with the family) hot wings, chili fries and other great-tasting-but-not-too-good-for-us-foods from a local place – it’s my dad’s birthday and that’s what he requested
    W: crispy parmesan chicken with bird’s eye vegetables and rolls
    Th: tacos or enchiladas with rice
    F: frozen pizzas

    It’s not very glamorous and I try to have leftovers for my husband to take to work the following day.
