Have you tried cooking with dried beans before? Until last fall when Hurst Family Harvest offered me a chance to try out their beans, I had never cooked using dried beans before. (Gasp!) I thought it might take more effort than I was up to, and couldn’t imagine those dry beans would ever actually cook!
But guess what? They’re so easy to use, and a great inexpensive way to provide a delicious warm meal for your family on a busy weeknight. Just pour them in a pot and cover with a few inches of water, then let them soak overnight (or 4-6 hours during the day.) Once they’ve soaked, you can slow cook them (my favorite way to use them . . .) or cook them on the stove top for about an hour! A package of Hurst Family Harvest Beans with seasonings costs around $1.99 at the grocery store, and will feed eight people when you add a few additional ingredients, so it’s a wonderful way to feed your family well on a budget!
Our version of Hurst White Bean Chicken Chili . . . absolutely delicious!
