Beans & Rice, Rice & Beans Meal Deal: Pizza Boats

Have you ever listened to Dave Ramsey talk about a living on “rice & beans and beans & rice” when trying to save towards your goals?  I’ve contemplated before starting a weekly feature including an incredibly frugal meal each week, and this one definitely fits the bill.  My friend Holly sent this simple (and seriously penny-pinched) meal deal at Kroger this week, and my kiddos gobbled down every single bite for dinner last night.  So, if you’re looking for a super fast & frugal meal on the run here you go . . .

 

Pizza Boats
Ingredients
  1. 1 loaf bakery Italian bread On sale $1 at Kroger – great price if you’d like sub sandwiches this week too!
  2. Spaghetti Sauce or Pizza Sauce hopefully in your pantry!
  3. Pepperoni On sale at Kroger $1, use the large ones and then cut them smaller down to size
  4. Mozzarella Kroger 4 cups cheese BOGO $6.29 ~ you get 8 cups of cheese for $6.29!)

Directions

  1. Cut Italian bread in half lengthwise then into sections.
  2. Spread sauce on bread, top with whatever toppings you want, then top with cheese.
  3. Bake at 350 degrees until cheese is melted.
  4. Serve with salad Publix has salad on sale $2.50 this week

    I was tempted to put the italian bread on my list and now I have a reason to buy it – I will definitely be trying this recipe. I already have everything else.

      I didn’t even realize the Italian Bread was that cheap, but that’s such a good price! Now I wish I’d grabbed it to freeze for a few other recipes….

    I think we are all pretty frugal, especially as couponers! I just made a huge batch of pasta sauce sauce to use for lasagna this weekend using my stockpile of canned tomatoes. But one of the yummiest and easiest things to make for me is mexican rice and it is so good. We use uncooked brown rice, veg, stock, diced tomatoes, garlic, and chili seasoning. We always have the ingredients at our house.
