Savory Slow Cooker Pot Roast with Veggies

This roast is cooking up in my crockpot right now and it smells amazing!!!  I’ve made the traditional Cream of Mushroom Soup Roast forever, but my husband just doesn’t love it.  (I’m thinkin’ he’s a little on the picky side!) 

 

Anyways, from the aroma in my kitchen I have a feeling he’s gonna love this one, I’ll let you know after dinner!  (If you’re not a fan of the traditional pot roast, you may want to also try out these Open Faced French Dip Sandwiches  or these Italian Roast Wraps . . . yummmm!)

 

Here’s what you’ll need . . .

1 (2 pound) boneless beef bottom round roast or chuck pot roast On Sale $3.69/lb. (probably not the best price ever, but it’ll still be way cheaper than the drive-thru!)

1 teaspoon garlic powder

1 tablespoon vegetable oil

1 pound potato, cut into wedges Idaho Potatoes, 5 lb bag, $2.69, use $1/1 Produce Target Coupon

3 cups fresh or frozen whole baby carrots

1 medium onion, thickly sliced Yellow Onions, 3 lb bag, On Sale $1.99 use  $1/1 Produce Target Coupon

2 teaspoons dried basil leaves, crushed

2 (10.25 ounce) cans Campbell’s® Beef Gravy $1.19 at Publix, use $.50/4 from 10/31 SS  or $.50/3 from Publix Share Something Delicious Booklet (Manufacturer Coupon) ; Campbell’s Gravy is also  on sale $0.49 at Kroger

Season roast with garlic powder.  Sear meat in oil on all sides (I just did the bottom and top, I can never seem to sear the sides correctly!)  Meanwhile, layer potatoes, carrots & onions in slow cooker.  Once meat is seared, place in cooker and sprinkle with basil.  Dump in Campbell’s gravy, and cook on low 10-11 hours or high 5-6 hours.  Enjoy!

Update – we just finished this up tonight and it was so good!  The only addition I might make when I do it again is I’ll add a beef bouillon cube to the crockpot in the morning, then make sure it dissolves throughout the day.  It could have used a little more flavor in my opinion, but I’m pretty sure that would do the trick!

    That is one of my family’s favorite meals..for leftovers I chip up the leftover beef, add a few potatoes,can of tomatoes, beef broth,can of veg-all or mixed vegetables (I keep a ziploc bag in the freezer and toss in leftover vegetables,green beans, corn, peas, etc) then turn the crockpot back on and we have beef vegetable soup. Great on cool (and rainy) days!

    Can’t wait to try this one since I agree with your husband. I’ve TRIED and TRIED to like the other one. Nope, just can’t do it! Thanks for a new recipe. Like Susan F’s suggestion of soup with the leftovers. Should be just right for the weekend!

      Susan K – this one is really good, the only addition I might try is adding a cube of bouillion to flavor it a tad more, but I loved that it didn’t taste so cream of mushroom-ey (Yes, I know there’s no way that’s a word, but you know what I mean!)

    I don’t know if this is the proper forum, however i have a great recipe for roast…. It is for taco’s. You put the roast in the slow cooker after basic seasoning then add 1 can of rotel which ever tempurature (mild, medium or hot) if it is a large roast u can put 2 different cans. Put it in about 10 am on slow and let it go all day til dinner then for dinner i pull out the roast and tear in pieces which is very easy since it is so tender, and fill the taco shells with meat lettuce cheese and tomato… it is deliciious.

    I use a can of cream of mushroom and a package of dried Onion Soup mix. We like it quite well. I just made it yesterday and plan to use the leftovers for a Shepherd’s Pie type of meal this week.

    I’ve invited the whole family to ours this xmas for a traditional dinner, so obviously the roast is pretty important! I found a bunch of ideas at this roast recipes site, but cant decide on anyone – there’s so many to choose from! It is fun planning such a big xmas dinner though!
