Am I the only one with nine packages of cream cheese lurking in the back of my refrigerator? (For any new readers, about a month ago there was a fabulous deal on free cream cheese thanks to this $5/5 Kraft Product coupon, so I’m betting many folks are stocked up!) Well if you’re still needing a few recipes to actually use some of that stuff, this is a great one (and will only use a little of your stockpile!)
This recipe is so yummy and simple, but the Pesto sauce is very strong, so if you’ve got anyone around your house that’s a little on the finicky side (ummmmm. . . like my kids . . . ) just cook the chicken up plain and leave the sauce off for them. (Leaving the good stuff for the less finicky folks in your family!) Here’s what you’ll need . . .
4 boneless skinless chicken breast We were out of chicken breasts so I used chicken tenders which were perfect!!! Chicken breast is on sale $2.99/lb. at Publix or $1.99/lb at Kroger
1/3 cup cream cheese Publix brand is probably the cheapest
1/3 cup chicken broth
2 tsp. olive oil
2 tsp. Italian Seasoning
2 tsp. Parmesan cheese
3 dashes salt
1 dash pepper
Cook chicken in non-stick skillet until completely cooked. Meanwhile, in small bowl whisk together chicken broth, olive oil, Italian seasoning, Parmesan cheese, salt & pepper.
Remove chicken from skillet, add cream cheese and melt over low heat until completely melted, stirring constantly. Once cream cheese is melted, add in remaining ingredients and stir until smooth. Cook on medium-low heat until sauce thickens a little. Serve and enjoy!
