You all left some amazing recipe ideas last week, so I’ve been checking them out for a little inspiration! We tried out Chelsea’s Zesty Slow Cooker Chicken this week, and then shredded up the chicken to make stuffed potatoes (I love stuffed potatoes!) This recipe is so simple, and smells absolutely delicious when you walk in the door at dinner time. . . my two favorite meal criteria! But the best part is, you can use FROZEN CHICKEN BREAST! NO THAWING REQUIRED! It’s also great for leftover sandwiches, so you’ll have dinner tonight and hopefully a few leftovers tomorrow. Thanks so much Chelsea for the idea – we loved it!

Bake potatoes in oven (or in microwave if you’re in a hurry! I’ve found that mine taste best in the oven when I coat with a little olive oil and kosher salt before baking.) Shred up chicken in crockpot, then top with sour cream and cheese. You can also serve the chicken in pieces with a side of potatoes if you’d like!
