I found this recipe in the new October issue of Southern Living Magazine and was thrilled to find a recipe with a bunch of ingredients straight from my pantry. (Doesn’t that just make life easy?) It took a whopping 8 minutes to throw in the crockpot, which might be my all-time cooking-up-dinner record!
I had never heard of King Ranch Chicken before but the best way to describe it is a Tex-Mex version of Chicken & Dumplings (Mmmmmm, homemade chicken and dumplings sure sound good too!) Here’s what you’ll need . . .
1 large onion we didn’t have one so I just used 1 tbsp. of onion powder
1 large green bell pepper chopped
1 can cream of chicken soup At Publix it may be cheapest to use the Publix brand; or get it free at Kroger (Campbell’s Cream soups on sale $1 at Kroger, use $1.50/3 Campell’s Great for Cooking Soups Shortcuts coupon, stacked with $1.50/3 Campbells Great for Cooking Soups printable)
1 can cream of mushroom soup At Publix it may be cheapest to use the Publix brand; or get it free at Kroger (Campbell’s Cream soups on sale $1 at Kroger, use $1.50/3 Campell’s Great for Cooking Soups Shortcuts coupon, stacked with $1.50/3 Campbells Great for Cooking Soups printable)
1 can Ro-Tel Use $1/3 RoTel Publix coupon from Publix Tailgate Booklet, or if you’re heading to Kroger load the $0.50/2 Ro Tel Diced Tomato Products Kroger eCoupon to your card
1 garlic clove minced if you’re in a hurry like I was just add a tsp. of garlic powder
12 fajita size corn tortillas we used flour tortillas
2 cups shredded cheddar cheese If you don’t have any in your stockpile, Sargento Shredded Cheese is on sale $2 at Publix this week
Mix together first 8 ingredients. Tear tortillas into 1 inch strips (I didn’t realize until I got to the fifth tortilla that this goes a lot faster when you tear 3 or 4 at a time!) Place 1/3 tortilla pieces into greased crockpot. Add 1/3 chicken mixture and 2/3 cup cheese. Repeat layers twice.
Cover and cook on low 3 1/2 hours. Uncover and continue to cook on low another 30 minutes. I’ve never cooked anything in my crockpot with the lid off, but it helps make the top a little “crustier” so it tastes more like it was baked in the oven (who knew?) Enjoy!
