What’s for Dessert? Robbie’s Perfect Peanut Butter Pie

  • Sharebar

I don’t know about you, but the meals that people brought me when I came home from the hospital with each of my new babies were my favorite meals ever.  After my Caroline was born, the Minister of Education at our church brought us this perfectly perfect peanut butter pie, and I’ve been waiting for the stars to line up (a.k.a. the coupon matchups to line up . . . ) to share it with you!

It takes about 5 minutes to throw together, and is a perfect cool treat during these fleeting days of summer (I’m itching to start working on fall recipes, but I’m trying to be patient!)  Here’s what you’ll need . . .

8 oz. cream cheese softened We used fat free, Kraft Philadelphia Cream Cheese On Sale $1.25, use $5/5 Kraft Cheese or Dairy Products

1 tub Cool Whip We used light, could also use Publix brand if it’s cheapest

Chocolate Graham Cracker Crust It’s definitely cheapest to make your own, but I confess that I bought mine at Publix for $1.99!

1 cup powdered sugar Use $0.50/2 Domino Sugar Products 8/29/2010 RP Insert (exp 11/30/2010), $0.30/1 Domino Sugar Product

3/4 cup peanut butter Peter Pan Peanut Butter BOGO $2.47, use $1/2 Peter Pan Peanut Butter All You (exp 10/31/2010)

1/4 cup milk I used skim

Beat cream cheese until light and fluffy.  Add peanut butter and powdered sugar, mix well.  Slowly add in milk, again, mix until well blended.  Gently fold in Cool Whip, and pour into graham cracker crust.  Drizzle with chocolate syrup or a little shaved chocolate, if desired.  YUMMMMM!

Note – if you choose to use low fat ingredients like we did, this will not be as firm a pie as the original recipe.  I was totally fine with that,  but if you like a thicker peanut butter pie you might want to use regular cream cheese, cool whip, and at least 2 percent milk!
