My family loved this recipe. But more importantly, my kids loved this recipe. We cleaned the entire casserole out in just one sitting (which is rare around here!) I’d been looking for a recipe that only called for ingredients found in our kitchen (and I’m betting ones you’ve got too!) and this one was perfect.
Here’s what you’ll need . . .
1 package frozen broccoli We used 12 oz. Green Giant Steamers
1 1/2 cups cooked chicken Cook according to whole chicken recipe; hopefully you grabbed some whole chicken at Publix for $1.19/lb. last week; Kroger also has Perdue whole chicken on sale $.77/lb. 8/5/10 – 8/7/10, or you can pick it up at Sam’s Club everyday for $.88/lb.
1 can cream of chicken soup Campbell’s Condensed Soups On Sale $1 $0.50/2 or $1/4 Campbell’s Condensed “Great for Cooking Soups”
1/3 cup milk We used some of my FREE Smart Balance Milk that I’ve been trying to use up when cooking and baking!
1 tsp. salt or seasoning salt
1/4 teaspoon pepper
2/3 cup cheddar cheese
2 tablespoons butter or margarine Margarine worked fine for ours!
4 tablespoons bread crumbs I used stockpiled Progresso breadcrumbs from the Italian Days sale last spring at Publix – I’m so bad to forget about those things and then they go to waste!
Cook broccoli according to package directions. Layer in pie plate or a round casserole dish. Add cooked chicken. Then mix cream of chicken soup, salt or seasoned salt, milk and pepper in small bowl, pour over broccoli and chicken, then sprinkle cheese on top. Melt margarine or butter and mix with bread crumbs, then sprinkle over top the casserole. Bake at 450 for 15 minutes and serve!

****If you’re interested in making this casserole ahead and freezing it, I would suggest doubling or tripling the recipe, leaving out the bread crumbs. Bake according to above directions, then freeze. (You can freeze it in the casserole dish and then pop it into a freezer bag once frozen to give yourself more freezer space!) When ready to reheat, thaw out and add breadcrumb mixture, reheat and serve!
