What’s for Dinner – Crunchy Onion Barbecue Chicken

Update – We just had this for dinner and it was delicious – my kids ate tons and my hubby said it was a keeper!

I found this recipe over at Full Bellies, Happy Kids, and I’m telling you what, just looking at her recipes make me happy too!  I’d love to try out her Smothered Pork Chops or Lemon Pie By The Yard soon . . . so much yummy food, never enough time!   

 So today we’re sticking with these because I’ve got everything in my pantry (and I’m hoping you do too!)  I found the nutrition facts over at Taste of Home, so I listed them at the bottom in case you’re interested (I was pleasantly surprised!)  Here’s what you’ll need for the Crunchy Onion Barbecue Chicken . . .  

1/2 cup barbecue sauce

$0.75/1 Jack Daniel’s Barbeque Sauce, 19 oz + OR EZ Marinader Product (IE) or Printable (FF)
$0.50/1 Jack Daniel’s Barbeque Sauce, 19 oz +
Cattleman’s On Sale $1 at Kroger  

1-1/3 cups french-fried onions, crushed
$0.50/1 Frenchs Fried Onions
$0.50/1 French’s French Fried Onions 5/9/2010 SS Insert (exp 7/11/2010)  

1/4 cup grated Parmesan cheese 

1/2 teaspoon pepper  

4 boneless skinless chicken breast halves (cut into strips)
Hopefully stockpiled, if not best prices are around $1.97/lb. at Sam’s Club or Costco and on sale Buy One Get One Free at Winn Dixie  

Put barbecue sauce in shallow bowl (try a pie plate).  In another shallow bowl, mix onions, cheesse and pepper.  Dip chicken completely in barbecue sauce, then one side in onion mixture.  Place chicken crumb side up on baking sheet coverered with cooking spray.  Bake at 400 for 22-27 minutes.   

Nutrition Facts: 1 chicken breast half equals 286 calories, 10 g fat (3 g saturated fat), 97 mg cholesterol, 498 mg sodium, 9 g carbohydrate, trace fiber, 36 g protein. Diabetic Exchanges: 5 lean meat, 1 fat, 1/2 starch.
