Some days I have the hardest time coming up with new recipe ideas, so I was so excited when my friend Jennie posted that her family was having Southwest Chicken Salad for dinner on PPP’s Facebook page earlier this week! (I may start asking what’s for dinner every night!)
This is a perfect easy summer dinner, and with all the Publix sales on these items you’ll get a great deal too! (I did think the tortilla chips were still a little pricy, so you could easily leave those out to make it healthier and pinch a few more pennies – I just happened to have them in our pantry!) Here’s what you’ll need . . .
Bag Salad Fresh Express Salad Blend BOGO $3.99

Mexican Style Corn We used a small can of Green Giant Southwestern Corn and it was PLENTY!
1/4 cup ranch dressing Ken’s Steak House Dressing BOGO $2.76, use $1/2 Ken’s Salad Dressings
1/4 cup barbecue sauce Jack Daniel’s Barbecue Sauce Advantage Buy $1.50, use $0.75/1 Jack Daniel’s Barbeque Sauce, 19 oz + OR EZ Marinader Product (IE) or Printable (FF), or $0.50/1 Jack Daniel’s Barbeque Sauce, 19 oz +
1 Tomato Tomatoes on the vine on sale $.79/lb.
Sour cream (optional) Daisy Sour Cream on sale $2, use $0.50/1 Daisy Sour Cream, 16 oz + (exp 12/31/2010) or $0.50/1 Daisy Brand Sour Cream 16oz+ 6/6/2010 RP Insert (exp 7/31/2010)
Cook chicken according to package directions (I just heated in the microwave). Layer tortilla chips, salad mix, chicken, tomatoes, cheese, and corn. Mix together ranch dressing and barbecue sauce for salad dressing, drizzle over salad. Top with a dollop of sour cream (optional – but I love sour cream, so I had to include it!) Now, hurry up and eat!
