Hurry Up and Eat – Southwest Chicken Salad

  • Sharebar

Some days I have the hardest time coming up with new recipe ideas, so I was so excited when my friend Jennie posted that her family was having Southwest Chicken Salad for dinner on PPP’s Facebook page earlier this week!  (I may start asking what’s for dinner  every night!)

This is a perfect easy summer dinner, and with all the Publix sales on these items  you’ll get  a great deal too!  (I did think the tortilla chips were still a little pricy, so you could easily leave those out to make it healthier and pinch a few more pennies – I just happened to have them in our pantry!)  Here’s what you’ll need  . . .

Cook chicken according to package directions (I just heated in the microwave).  Layer tortilla chips, salad mix, chicken, tomatoes, cheese, and corn.  Mix together ranch dressing and barbecue sauce for salad dressing, drizzle over salad.  Top with a dollop of sour cream (optional – but I love sour cream, so I had to include it!)  Now, hurry up and eat!

Thanks so much to  I Heart Publix and Two Thrifty Sisters for the coupon matchups.  And be sure to visit $5 Dinner Mom for even more great bargain meal deals!

  1. This does sound good! Wow. Adding to my must make list.

  2. If you have taco seasoning in the house, add some to the ranch dressing. Also, shoepeg corn is a tasty corn option as well as black beans (drained), black olives, etc. Really anything you like.

  3. Thanks Jennie for the tip on the dressing – that was the one thing I wasn’t sure on how to make! Black olives and black beans would be great too (the mexican corn includes a little of those, but they’re pretty sparse!)

    Jackson says hi! :)

  4. I just made this last night. Hubby & I were big fans. :) He said the dressing tasted like something you’d get in a restaurant.
