Update – we made these tonight and they were SOOOOO good! I do recommend spraying your grill with cooking spray (or greasing) because the kabobs did stick a little when we turned them the first time. (Use $1/1 Pam Grilling Cooking Spray coupon if you need it!) This was a little more time consuming than most our meals, but completely worth it!
I love grilling season! I decided to try out pork kabobs this week, because I figured my kids would go for anything they can eat on a stick (at least I think they will!) and it’ll be something a little different than our everyday burgers or chicken.
I’ve got this marinading right now (and all the ingredients out ready for my hubby to start cooking), and I’ll add pictures of the finished product tonight at dinner time. Here’s what you’ll need . . .
$1/1 Pompeian Olive Oil 5/23/2010 RP Insert (exp 7/31/2010)
1 clove garlic, minced
We were out of fresh garlic so we substituted 1/4 tsp. garlic powder
salt and pepper to taste
We used 1/2 tsp. salt and 1/4 tsp. pepper
1 pound boneless pork, cut into 1 inch cubes

1 (14.5 ounce) can low-sodium beef broth

2 cloves garlic, minced
I’d rather use fresh but since we’re out we’re using 1/2 tsp. garlic powder!
1 large onion, cut into 12 wedges

12 bite-size chunks fresh pineapple
We’re using canned Dole pineapple (priced at $1.39 at Publix, use $1/2 Dole Pineapple)
Kroger has fresh pineapple chunks also on sale for $1 this week
Combine 3 tablespoons soy sauce, 1 clove minced garlic, olive oil, salt and pepper in small bowl. Place pork chunks in plastic bag, pour marinade over pork and refrigerate for 3-6 hours.
Preheat grill to medium heat. Be sure to lightly grease cooking grates prior to cooking. In small saucepan combine beef broth, cornstarch, 2 tablespoons soy sauce, brown sugar, 2 cloves minced garlic, and ginger. Heat to a boil, stirring constantly. Reduce heat, and simmer 5 minutes.
Place pork cubes, pineapple chunks and onions on skewers. Grill approximately 15 minutes on medium heat, basting frequently while cooking and turning skewers occassionally until meat is cooked through. Reserve 1/2 cup sauce to serve with kabobs.
