What’s For Dinner – Sweet Chicken Salad

You all have completely inspired me with all your great salad suggestions for the Suddenly Salad Giveaway!  Just this weekend I tried Arby’s chicken salad sandwich (it was really good for fast food chicken salad), and when I saw all your yummy salad ideas I knew I wanted to try something similar out.

This is really good, and while you’ll spend a few minutes chopping (it took longer than I expected), it’s so worth having all the different flavors.  If  you have a Pampered Chef Chopper (or something similar), go ahead and pull it out because it will make your work much easier.  What’s really great about this recipe is that it’s good when you make it, but it’s great 24 hours later.  So go ahead and mix it up and you’ll have it on hand for a few days!

I’m taking this to church to serve on some BOGO Ritz crackers, and then my hubby and I are having it for dinner on sandwich bread (it would also be great on crossiant rolls or even in a wrap!)  If you need an idea for your kids, don’t forget the BOGO Perdue Chicken Nuggets (I hate the idea of being a short-order cook but I’m pretty sure my gang won’t go for this one . . .)  Here’s what you’ll need for the chicken salad:

2 cups cooked shredded chicken
Whole chicken on sale $1.09/lb., cook according to crockpot chicken recipe .   Whole chickens are on sale $.89/lb. at Albertson’s if you’re lucky enough to have one nearby! 

2 golden delicious apples, cored, peeled and sliced

1/2 cup yellow raisins

1/2 cup grapes, sliced
On Sale $.99/lb. at Kroger and Albertson’s this week

1/2 cup toasted pecans, chopped
To toast just bake in oven at 350 for 4-5 minutes, watch closely so they don’t scorch

4 green onions, chopped

1/2 teaspoon pepper

1 stalk celery, chopped

1 cup mayonaise
Kraft Mayo Real Mayonnaise or Miracle Whip Dressing BOGO $3.99, Use $0.75/1 Kraft Kroger My Magazine Grilling (exp 8/1/2010) or $1.50/2 Miracle Whip or Kraft Mayo 6/20/2010 SS Insert (exp 8/15/2010)

2 1/2 tablespoons sugar

Mix all ingredients well.  Cover and refrigerate – tastes best after it has been refrigerated several hours.  Enjoy!
